My View on Brie vs. Camembert

Camembert is considered the top dog of soft cheeses but I think it's a farse! Brie is much tastier, it's creamier, smoother and not so smeely for starters. Also, it's considerably cheaper (in the UK anyway). I'm willing to consider that perhaps deep-fried camambert may top just a simple slab of brie - but give me a chunk of both and I'll pick the brie every time. Some people will point out, rightfully so, that there's not really any difference betweent he two, they just originated from different regions in France - but these days I think there is a distinct difference, particularly in smell - and brie wins it!

I'm French, and both I and my bf agree: we are big fans of brie and both dislike camembert -too smelly, not subtle at all... whereas brie is... smooth, creamy, and so wonderful! =)

How is Brie Made?

Brie is made from pasteurised or unpasteurised milk and it can by skimmed or whole. Once the curd is ready, it is cast into molds using a ladle with holes in it. The molds are filled with several thin layers of cheese and drained for about 1 day.

Once the cheese is removed from the molds it is salted and inoculated with Penicillium candidum (a fungus). This fungus creates the light crust found on brie and softens the cheese as it gets to the centre. (It ripens from the outside in). It is generally ages in a cellar for at least 4 weeks.

How is Camembert made?

Camembert is made in essentially the samwe way as brie but for traditional Camembert you have to use the fresh raw milk of Norman cows because is has a high fat content and is rich in vitamins and proteins.

Once the milk is curdled, it is inoculated with Penicillium camemberti bacterium. Then the curd is packed into molds and aged. It has to age for at least 21 days.
