Broccoli-Rice-Sausage Casserole - 12 Easy Steps

We were invited to a "covered dish" tonight at a friend's home. She has re-done her old family home place which was built in 1790 and wanted to have her neighbors and friends over.

I immediately thought about our family favorite - The Broccoli-Rice-Sausage Casserole. A neighbor-friend gave me the recipe about 30 years ago and all my family enjoys it.

The only thing wrong with it is that you mess up a lot of dishes so it is wise to double the recipe and make one for your freezer.

Step 1 - Find The Recipe

Here it is! It is the same card that my friend gave me 30 years ago.

Recipe for Brocoli-Rice-Sausage Casserole

It can also be found in our Tate Family Cook Book 

Step 2 - Get All Your Ingredients

1 pound sausage (hot or mild)
1 box chopped broccoli
2 cans Cream of Mushroom Soup
1 cup dry rice
1 medium onion diced
milk as needed
grated cheese for the top

Note: Recipe serves 10 people

Step 3 - Preheat Oven

Preheat Oven to 350 degrees.

Bake Casserole

Step 4 - Brown Sausage and Saute Onion

Step 5 - Cook Broccoli and Rice

Step 6 - Grate the Cheese for the Top

Step 7 - Add Sauteed Onions to Browned Sausage and Drain

Step 8 - Drain The Broccoli

Step 9 - Mix Broccoli, Rice, Sausage, and Onion in Bowl

Step 10 - Add 2 Cans of Cream of Mushroom Soup

Step 11 - Place in Casserole Dish and Top With Cheese

Step 12 - Bake at 350 Degrees for 30 - 45 Minutes

Helpful Hints and Suggestions for This Dish

Be sure to squeeze out all excess water when draining the broccoli or casserole will be too soupy.

You can add a little milk if it seems too thick but I have never had to do that.

Salt and Pepper before adding cheese.

Use Sharp Cheddar and not Extra Sharp.

Recipe says that you can add almonds or chopped celery but I have never done this either.

Looks very pretty served with Curried Fruit. Add baked eggs for a great brunch.

After cooking, soak up excess grease with paper towel.

Serving a big crowd and need to keep everything warm?

Christmas Morning Brunch Menu

Broccoli-Rice-Sausage Casserole
Baked Eggs in Christmas Muffin Liners
Tomato Aspic
Buttered Biscuits

This was my menu for Christmas Morning and my family seemed to enjoy it. I probably will not bake the eggs in the muffin liners but bake them right in the muffin tin. They were so good. The Tomato Aspic was the perfect side dish for the Casserole. It tasted like a congealed Bloody Mary. I wish I had thought to take a picture because it did make a beautiful plate

I could tell it was a great dish just by looking at the recipe card! A dud wouldn't have so many drips and splashes on it! Easy to see this card's seen some service. The ingredients and finished product make my mouth water...and so does the idea of consuming it at a home built in 1790! Food and history...two of my favorite things!
