Broccoli-Rice-Sausage Casserole Recipe - 12 Easy Steps
Broccoli-Rice-Sausage Casserole Recipe is one that your whole family will love!
We were invited to a "covered dish" one night at a friend's home. She has re-done her old family home place which was built in 1790 and wanted to have her neighbors and friends over.
I immediately thought about our family favorite - The Broccoli-Rice-Sausage Casserole. A neighbor-friend gave me the recipe about 30 years ago and all my family enjoys it.
The only thing wrong with it is that you mess up a lot of dishes so it is wise to double the recipe and make one for your freezer or just have a day of cooking and make several for your freezer. This is a great casserole to have on hand and can be served as a side dish or the main dish. It can even be served for Brunch or for Dinner.

Broccoli Rice Sausage Casserole Recipe Card
A Family Favorite!
- Serves: 10
- Prep Time: 30 min or more
- Total Time: 1 hour or more
This is one of our family favorites!
This freezes very nicely so make two while you are at it and then freeze one for later.
Ingredients
- 1 pound sausage (hot or mild)
- 1 box frozen chopped Broccoli
- 2 cans Cream of Mushroom Soup
- 1 cup dry rice
- 1 medium onion - diced
- milk as needed
- grated cheese for the top (sharp)
Instructions
Brown Sausage and drain.
Saute Onion
Cook Broccoli according to box directions and drain
Cook Rice according to directions
Grate Cheese for the top
Mix Broccoli, Rice, Sausage and Onion in bowl
Add 2 cans Cream of Mushroom Soup
Place in casserole dish, salt and pepper to taste and top with cheese
You can add a little milk if it seems too thick.
Backe at 350 degrees for 30 to 45 munites
After Cooking, soak up excess grease with paper towel

Mix in 2 cans of cream of mushroom soup and stir until it is all covered with the soup.

Casserole Needs
Helpful Hints and Suggestions for This Dish
You can add a little milk if it seems too thick but I have never had to do that.
Salt and Pepper before adding cheese.
Use Sharp Cheddar and not Extra Sharp.
Recipe says that you can add almonds or chopped celery but I have never done this either.
Looks very pretty served with Curried Fruit. Add baked eggs for a great brunch.
After cooking, soak up excess grease with paper towel.
Serving a big crowd and need to keep everything warm?

This was my menu for Christmas Morning and my family seemed to enjoy it. I probably will not bake the eggs in the muffin liners but bake them right in the muffin tin. They were so good. The Tomato Aspic was the perfect side dish for the Casserole. It tasted like a congealed Bloody Mary. I wish I had thought to take a picture because it did make a beautiful plate.

- This sounds really good. I'm not keep on mushrooms, but you could I guess substitute a cream of chicken soup. Love the recipe and the detailed preparation guide etc, I left a blessing behind.
