Crunchy Broccoli Salad - With Bacon Bits

Enjoy my recipe for a fresh broccoli salad this summer, or anytime you need a green vegetable salad.

Broccoli is always in season. This dies works well for entertaining and potluck dinners. This lens includes my recipe, that I developed after eating Broccoli Salad at a carry-in lunch.

I love the raw veggie crunch, as well as the sweet and sour tang in the dressing. There are many versions; I created a version similar to the one I'd eaten at the party.

This recipe uses crisp raw broccoli and the sweet and sour dressing. And bacon bits (there's a veggie version further down). The bacon gives it a nice salty touch as well. (Isn't everything better with bacon?) You can always go with the faux bacon bits (vegetable protein) if you're not doing that sort of thing.

Found the perfect bowl among my vintage glass collection. The bowl is in the Soreno pattern by Anchor Hocking, in avocado green.

But this salad tastes good in any dish!

Broccoli Tip - Use the Stem for Slaw

If You Love a Crunchy Summer Salad

Head of broccoliJust heard this, watching Anne Burrell from the Food Network, on Good Morning America. Such a great tip!

After you use the broccoli florets for my salad, take the stems, peel and julienne them, and put them into your slaw. Now you have two salads, and use up every bit of the head of broccoli.

Her recipe has carrots, celery and apples in it as well. Have to track it down!

I'm thinking this works for cauliflower as well.

we used to make one with dried cranberries and nuts in it, it was the best one I've ever tasted... but I have to support anything that uses bacon.
