My Favorite Brownie Recipes

Calling all Brownie Lovers!!
First on my list is is a simple brownie recipe with lots of flavor, Fudge Brownie Cut-Outs.
Second on the list Fudge Brownies with Chocolate Chip Cookie Dough Icing. Who can resits brownies AND cookie dough all in one treat.
Last, but not least, Double Fudge Brownies. They are full of chocolate chips, two different kinds to be exact, and hickory nuts or walnuts (your choice).
Middles, Edges, or Corners?
Fudge Brownie Cut-Outs
All Middles!
These are really fun for the kids! Bake them, let them cool, then cut fun shapes for any occasion with cookie cutters.
Ingredients
- 3 eggs
- 2 cups sugar
- 1 1/2 teaspoons pure vanilla extract
- 1/2 cup melted butter
- 1/4 cup melted shortening
- 1 1/2 cups unbleached all-purpose flour
- 3/4 cup baking cocoa
- 1 1/4 teaspoons salt
- 1 cup chopped hickory nuts or walnuts (optional)
Instructions
Fudge Brownie Cut-Outs
In a large mixing bowl, beat together eggs, sugar, and vanilla until well blended. Add Melted melted butter and shortening. Mix until well combined.
In a separate bowl, combine flour, cocoa, ans salt; gradually stir into egg mixture. Add nuts, if desired.
Spread batter into a greased 13 by 9 inch baking dish.
Bake at 350 degrees F for 30 minutes or until a toothpick comes out with moist crumbs. Allow to cool on a wire rack. Enjoy!
Or...using cookie cutters from your favorite holiday or occasion, cut your brownies into fum shapes. You could even ice or decorate them.
If like Brownie edges and corners...
Fudge Brownies with Chocolate Chip Cookie Dough Icing
I love to eat cookie dough, but eating raw cookie dough is a no-no because of increased chances of food poisoning from consuming raw eggs.
There are no raw eggs in the cookie dough icing, so eat up with no worries.
Ingredients
- 1 cup semisweet chocolate chip morsels or chunks
- 1/2 cup softened butter
- 1 cup granulated sugar
- 3 medium eggs
- 1 teaspoon pure vanilla extract
- 1 1/4 cup unbleached all-purpose flour
- 1/4 teaspoon baking soda
- 3/4 cup chopped walnuts or hickory nuts
- 'Chocolate Chip Cookie Dough' Icing:
- 1/2 cup softened butter
- 1/2 cup packed brown sugar
- 1/4 cup granulated sugar
- 3 tablespoons milk
- 1 teaspoon pure vanilla extract
- 1 cup unbleached all-purpose flour
- 1 cup semisweet chocolate chip morsels or chunks
Instructions
Fudge Brownies with Chocolate Chip Cookie Dough Icing
Preheat oven too 350 degrees F.
Melt 1 cup semi-sweet chocolate chip morsels in a double boiler, allow to cool slightly. Meanwhile, in a mixing bowl, cream butter and sugar. Add eggs and vanilla, mixing well between each addition. Gently stir in melted chocolate morsels. Combine the flour and baking soda in a small bowl and add it to the batter. Stir in walnuts or hickory nuts.
Spread batter into a greased 13 by 9 inch baking dish. Bake at 350 degrees F for 16 to 22 minutes or until toothpick inserted into center comes out with moist crumbs. Allow to cool on a wire rack.
For Icing:
In a mixing bowl, cream together sugars and butter. Beat in vanilla and milk. Then add flour a little at a time. Stir in chocolate chip morsels (I used chunks). Drop by spoonfuls over the cooled Fudge Brownies; carefully spread icing all over the top. Enjoy!
Cut into squares to serve. Store brownies in the refrigerator.

Double Fudge Brownies
If you like chocolate, you will love this brownie recipe!
This recipe makes about 16 brownies, so I usually double it and put it in a 9 inch x 13 inch baking dish. This makes thicker brownies.
With two kinds of chocolate chips, it packs a lot of chocolate flavor.
Ingredients
- 1/2 cup canola oil
- 1/4 cup baking cocoa
- 1 cup pure cane sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup unbleached all-purpose flour
- 1/8 teaspoon salt
- 1/2 cup chopped hickory nuts or walnuts
- 1/4 cup milk chocolate chips
- 1/4 cup dark chocolate chips
Instructions
Double Fudge Brownies
In a small mixing bowl, combine oil, vanilla, and cocoa until smooth; set aside. In an electric stand mixer, beat sugar and eggs together, until creamy. Add cocoa mixture.
In a large mixing bowl, combine flour and salt; gradually add to chocolate mixture just until moist. Fold in nuts.
Pour mixture into a greased 8 inch square baking dish; sprinkle chocolate chips on top. Bake at 325 degrees F for 30 minutes, or until a toothpick inserted into the middle comes with moist crumbs.
Allow to cool on a wire rack. Enjoy!
