The first is for miniature Brownie Bites. They are perfectly simple, perfectly delicious and perfect for your cookie trays and buffet tables. So easy to pop into your mouth and enjoy. Better than any store purchased brownie bite, for sure.
The second is for an amazingly chewy and of course chocolatey brownie. It, too, is simple to put together and delicious to eat.
The final brownies recipe is perhaps the most complicated although not really difficult. It will take a bit longer to put together but the result is fantastic...the perfect blend of two delicious flavours, chocolate and raspberry.

Fudgey Brownie Recipe
Fudgey Brownie Recipe
A very traditional, unfrosted brownies recipe.
- Serves: Makes 3 Dozen
- Prep Time: 10 minutes
- Total Time: 35 minutes
This recipe originated from a clipping that was a part of a recipe booklet, I assume it was from the manufacturer of the products recommended in the recipe.
Ingredients
- 1 cup plus 2 tablespoons of butter
- 1 1/2 cups sugar
- 3 eggs
- 1 1/2 teaspoons vanilla
- 1 cup flour
- 2/3 cup baking cocoa
- 2 teaspons baking powder
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1/2 cup chopped walnuts or other nuts (optional)
Instructions
Using a medium sized pan, melt the butter and then remove the pan from the heat. Stir in sugar and then add each of the eggs separately, stirring after the addition of each one. Finally, stir in the vanilla. In a separate bowl, mix together flour, cocoa, baking powder and salt. Add the dry mixture into the butter mixture along with the chocolate chips and the nuts, if using. Stir only until the ingredients are blended. Bake in a GREASED 13 by 9 inch pan in a 350 degree oven for 25 minutes. The brownies will be a bit firm at the outside edge but soft in the center. You can insert a knife in the center, if you like. The knife should come out mostly clean of brownie mix. Cool and then cut and enjoy!

Brownie Bite Recipe
The best-ever brownie bites are shown here along with two other fantastic sweet treats, the best-ever M & M Cookies and the best-ever ginger crinkles. These three cookies my family's favourite cookies and are served every year on our Christmas cookie tray.
Brownie Bites Recipe
Better than any brownie bites you can buy at the store!
- Serves: Makes 12 Brownies
- Total Time: 30 minutes
A simple recipe, which stirs together in a pan. All you need in terms of special equipment is a mini muffin or brownie pan.
Ingredients
- 1/3 cup of brown sugar
- 1/4 cup of butter
- 3 ounces of semi-sweet chocolate
- 1/2 teaspoon of vanilla
- 1 lightly beaten egg
- 1/3 cup of flour
- 24 chocolate rosebuds
Instructions
Start by melting your sugar, butter and chocolate together in a small pan on the stove. Then add the chocolate and stir until it is melted. Remove your pan from the stove and cool for about a minute and then blend in both the vanilla and the egg. Add the flour and stir it in until blended. Spoon into your GREASED mini muffin tin and bake at 350 degrees for about 10 to 12 minutes. Remove from oven and press a rosebud onto the top of each miniature brownie bite. Rosebud will take awhile to cool, so if you are taking these somewhere, make sure you allow plenty of time for the chocolate candy to harden up again. These brownie bites are too easy and yummy, too!

Chocolate Raspberry Brownies
Chocolate Raspberry Brownies
Bringing two very delicious flavours together to make one delicious pan of brownies!
- Serves: Makes 2 dozen
The origin of this recipe is unknown. It is written in my handwriting and has been in my recipe binder for somewhere between ten and twenty years.
Ingredients
- 1 cup unsalted butter
- 5 ounces unsweetened chocolate chopped
- 2 cups of sugar
- 4 large eggs
- 2 teaspoons of vanilla
- 1 1/4 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chopped toasted walnuts (optional)
- 1/2 cup raspberry jam
Instructions
For this recipe, you will need a buttered or GREASED 13 by 9 by 2 inch pan.
Start by melting the butter and the chocolate over low heat in a medium sized pot and then remove the pan from the heat. Add the sugar, eggs and vanilla, stirring until incorporated. In a separate bowl, mix the flour, baking powder and salt in a small bowl. Add the dry ingredients to the chocolate mixture and blend. Stir in the nuts, if you are using them. Pour 2 cups of the batter into the pan and then FREEZE the pan for 10 minutes, or until firm. Spread the jam over the brownie mixture that you have frozen and add the rest of the brownie batter onto the top. Preheat your oven to 350 degrees. Thaw your pan of brownies for twenty minutes and then bake them for 35 minutes. Once cool, cut into squares and enjoy!
CorningWare French White 9-Inch-by-13-Inch Baking Dish
I was given a large French White set when I was married more than twenty years ago and I am still using every single piece, albeit one lid has a chip.
I only recently started using my casserole dishes as baking dishes, for instance I recently baked a 13 by 9 inch cake in an oblong casserole dish.
The result? No difference...well if you don't count the fact that it cleaned up really easily, that there were no scratches on the pan from cutting the cake, no rust, etc. Therefore, I will add one of these to my kitchen equipment and I am glad to see that the sellers on eBay have this hard-to-find size in stock.

Alice Medrich's Cookies and Brownies may just be the BEST brownie cookbook out there (if you agree with Amazon customer reviews.) The one caution I see is that this is a SMALL cookbook with only about 50 pages. However, with comments like, "I can imagine making EVERY recipe in this book and I cannot say that about any other cookbook I own," "I made the classic brownies with the water bath the other day. Best brownies I ever made" and "you will need no other cookbook for cookies" this may just be the perfect cookbook.
