Brunch is a Favorite for Family Gatherings

Breakfast foods have always been a favorite with my family, so it is natural that when we get together a brunch is the ideal meal.

Holidays are always a good time for brunch we have one for Christmas, Easter and Mothers Day. Since several family members live out of town this menu has also been used when family and friends are overnight guests.

Over the years our menus have changed and been refined but we still have some basic favorites that are at every brunch. This lens will share my families favorite recipes and show you some of our menu ideas.

#1 Brunch Menu Item 

Eggs Fantastic

The top menu item in all of our family brunches is always eggs fantastic. This is a wonderful concoction of eggs, sausage and cheeses that we have been making for over 30 years. I'm not sure where the original recipe came from, but over the years we have refined it to the recipe that is shown below.

There have been times where I have wanted to try something different, but due to popular opinion, I have always come back to this favorite egg casserole recipe.

One of the great things about this recipe is that it can be made up the evening before and then popped in the oven 30 minutes before brunch time.

Eggs Fantastic

Ingredients for Eggs Fantastic
6-8 Eggs
3 T Sour Cream
1/2 lb. bulk Sausage
1/4 lb chopped Mushrooms
1Onion diced
6 T Chili Sauce
8 oz. Shredded Velveeta Cheese
8 oz. Shredded Cheddar Cheese
8 oz. Shredded Mozzarella Cheese

Directions for Eggs Fantastic

Preheat oven to 400 F, grease a 9x13 pan

Combine your sausage, mushrooms and onions in a skillet. Saute these items until the sausage is completely cooked. Drain well and set aside.

While the sausage is cooking I combine the eggs and sour cream in a blender for about 1 minute. Pour the egg combo into a greased baking dish and bake until the eggs are soft set. This takes about 5-10 minutes. I keep a close watch on this.

Next you spoon the chili sauce over the eggs, then spoon the sausage mixture over that and finally layer with the combined cheeses.

If you want to serve immediately you can broil until the cheeses are melted.

To serve the next day, cover and refrigerate. The next day you will uncover the casserole and bake it at 325 F until the cheeses are melted.

This cassorole serves 6-8 people.

Hot Fruit Casserole 

delicious fruit side dish

This dish is a favorite for our winter brunches. The casserole can go in the oven with the same timing as the egg casserole.
  • Ingredients
    1 can pineapple chunks
    1 can sliced peaches
    1 can apricot halves
    1 jar spiced apple rings
    1 cup sugar
    1/4 cup flour
    pinch of salt
    1t fruit juice
    1 stick butter (room temperature)
    1 tube of crackers (crushed into crumbs)

  • The first thing you want to do is to drain all of your fruit. The fruit listed above is what I usually use, but you could substitute other canned fruits. Fruit cocktail or mandarin oranges would work well.
  • Mix all of the nonfruit ingredients together to make a crumb topping.
  • Position your fruit in the bottom of a 9x13 pan sprayed lightly with cooking spray.
  • Sprinkle crumb topping over the to of the fruit.
  • Bake at 350 degrees for 25-30 minutes or until golden brown.

I love the winterberry design on this platter. I start use this design all through the winter months. It has just a touch of green and holly without giving it too much of a Christmas look.

You have reminded me that I need to eat soon. Is brunch being served now? Very helpful lens. Wonder if I can talk my brother's family into having brunch rather than turkey on Thanksgiving. They come so far and then turn right around after dinner and then go home, since my sil works on Thanksgiving night. Looks like we'll be having ham this year.
