Brussels Sprouts in Cheese Sauce for Thanksgiving

My Brussels Sprouts in Cheese Sauce recipe takes simple Brussels Sprouts and turns them into a super side dish your family will love!

Brussels Sprouts in Cheese Sauce makes a terrific Thanksgiving dinner side dish but can also be served and enjoyed any time of the year.

For those of you with children, adding cheese sauce to Brussels Spouts (or any vegetable) makes the vegetable more appealing and your finicky eater might be more likely to try them.

In any case, this is a really great way for everyone to get their greens!

Of course, this recipe is not for the diet concious but then again who watches what they eat on Thanksgiving Day?

To save time, you can prepare the brussels sprouts a day in advance and then reheat and make the cheese sauce on the big day and continue cooking.

I've entered this recipe into the Squidoo Thanksgiving Cookoff (for Charity). If it gets selected, Room to Read, gets $1000.  I hope you enjoy -- and if you do, don't be shy, spread the word!

Brussels Sprouts in Cheese Sauce Recipe

Prepare Brussels Sprouts for cooking by trimming off the dry end of the stem and removing any brown leaves, then cutting a shallow X into the stem.

Ingredients for Brussels Sprouts in Cheese Sauce

3 pounds Brussels Sprouts
1 Tablespoon Corn Starch
1 cup Milk
2 Tablespoons Butter or Margarine
1 cup shredded Cheddar Cheese
Salt and Pepper to taste

Directions for Making Brussels Sprouts in Cheese Sauce

Bring a large sauce pan of water to a boil, add the Brussels sprouts and cook until just tender. Approximately 8 minutes.
Drain and let dry.

Make the Cheese Sauce

In a small sauce pan, over medium heat, combine milk and corn starch, stir until smooth.
Add butter, salt and pepper.
Stir constantly while simmering until the sauce thickens. This takes only a minute or two once the milk is hot.
Add the cheese and stir until melted.
Remove from heat.

Place Brussels sprouts into a serving bowl and pour the Cheese Sauce over them.
Stir to coat all of the Brussels Sprouts.
Serve immediately.

Makes about 8 servings.
