YUM YUM YUM....Brussels Sprouts! I love them, but sadly as I'm the only one in my family that does, I rarely get to enjoy them these days. After reading this Lens, I REALLY want some!
  • Ruthi May 26, 2012 @ 1:16 pm | delete
I am on the side of those in that 2002 survey with brussels sprouts being the most disliked vegetable in Britain--I do NOT like them!
  • Millionairemomma May 26, 2012 @ 4:20 am | delete
Believe it or not my baby loves them, especially soaked in ham juice and balsamic vinegar. The apple green color is absolutely fab! Lovely!
  • xriotdotbiz May 24, 2012 @ 9:31 am | delete
I gave this lens a SquidLike, Liked it to Facebook, and it is an awesomely done lens. Sadly, brussell sprouts was my yucky choice for the quest on National Escargot Day. However, I will say this- I would eat brussel sprouts before I would eat snails.
  • KampSeagull May 21, 2012 @ 10:19 pm | delete
I don't really like canned sprouts, but I can get them fresh in the fall from a friend's farm. Then, they are delicious and she shared a recipe with me where they are cooked in maple syrup... delicious! Thanks! Your lens made me smile. :)

Julie, how much blue cheese would you suggest if it was converted to American measurements for taste - 1/4 cup? Any more than a 1/2 cup seems like it would be too rich. It looks to be wonderful, though...making it tonight with jasmine fried rice and roasted garlic chicken.

  • Gala98 Apr 22, 2012 @ 12:04 pm | delete
I usually have them just boiled but one of my fav ways is to thinly slice them & half fry/half steam them in a frying pan with the lid on. Lots of butter & a spoonful of water & just turn them occasionally. Sometimes I add crispy bacon bits too :P
  • fish-oil-expert Apr 21, 2012 @ 6:56 pm | delete

  • Badbreathguy Apr 10, 2012 @ 1:32 pm | delete
I like them now but as a youngster I wasn't so keen. My dad used to grow his own and that was when I became a brussel sprout convert.

I'm not so keen on peeling them before cooking, but fresh out of the garden is best, in my opinion.

    Nice lens.

  • mjtaylor Mar 15, 2012 @ 8:35 am | delete
I had to visit your lens and have a bite. I confess: I do not like brussels sprouts, though I no longer hate them. Someday I will probably like them, or even love the little cabbages. When I was a child I didn't have to eat everything, but there was a one bite rule. No matter how much I disliked something, I had to have one bite. It is a habit that stuck and I have learned to love many foods I hated as a child. When I saw your lens, though I would have preferred to eat your stuffed cabbage rolls, I felt compelled to come here first and get it over with.
  • Donnette Mar 15, 2012 @ 12:59 am | delete
I absolutely love Brussels Sprouts... My mother and I are the only ones i know of around us that will eat them - and enjoy- simply boiled up with a little salt... YUM YUM!!! Have never succeeded in sharing this enthusiasm with any of my children who range from 6 years to 30 years :)
  • AliceSim1 Mar 13, 2012 @ 3:55 pm | delete
I'm trying to eat more brussel sprouts because they're taken for granted, but I can't seem to shake that bitter taste in the middle that doesn't get cooked as well. I've tried to oven roast them in balsamic and olive oil, which were pretty tasty, but I couldn't eat more than a few bites. Do you know of any other recipes with strong seasonings/flavors for brussels?
  • charlb Mar 13, 2012 @ 9:28 am | delete
I love brussel sprouts and I find them so cute too! Somehow I never get to cooking them enough and it seems I am not creative with them. Just last weekend though I roasted brussel sprouts with chick peas, olive oil and salt and pepper. They tasted yummy and were a great side dish for my roast chicken.

Personally I love brussels sprouts. Although I have to say that I was quite disturbed to hear that in the UK a chocolatier in South Yorkshire came up with the idea of coating them in chocolate. They were very popular with all that tried them, so maybe they aren't so bad after all!

always loved my brussel sprout, shame that my bf hates the smell, so I hardly ever get to prepare them. My favorite is to fry them after cooking them for a few minutes and then add bits of salami.

Never knew somebody could write so much about this vegetable, but you sure did a great job. I think I am going to try the "Pan-Browned Brussels Sprouts" recipe today, the garlic combo does look yummy! happy holidays and thanks again for the inspiration!

Fabulous Lens. Your energy and enthusiasm is just a delight. I love brussel sprouts. Tried to grow them this summer and just about NOTHING happened... not one sprout... just a few cabbaby looking leaves. Disappointing, but I'll try again next summer, of course!!!!

This is a fabulous page. I love Brussel sprouts and these recipes sound delish, in fact I am copying them to try later this week with the extra fresh ones I didn't use at Thanksgiving. I just roasted mine with some bacon and added a little grated Romano cheese when they were done. Very simple, but they were good. I wish I had found this lens 2 days ago. I would have used one of these recipes instead. They sound so much better than what I did! *Squid Angel Blessed* and I've added your link to My Squid Angel Wings to be featured in the "Food & Cooking " neighborhood.

Great lens! I love brussel sprouts. I bought them on the stalkfor the first time at the farmer's market this fall. I never knew how beautiful they were!
  • Northwestphotos Nov 22, 2011 @ 6:01 pm | delete
My favorite way of preparing brussel sprouts is to bake them with bacon bits and olive oil. First quarter the brussel sprouts, spread them in a baking pan, drizzle with plenty of extra virgin olive oil to coat, add as much bacon bits as desired, and bake at 375 degrees until spouts are tender and outside layers start to turn a bit black and crispy. These are delicious!

Brussels sprouts - can't get them down.

Interesting, I always thought is was brussel (singular) sprouts. Spell check (and it would appear your lens) feels differently (is Brussels sprouts)

I'm going to try making Brussels sprouts for the first time this evening. I'm 27 years old and I've never even tried them. Are there any recipes that don't call for butter? I'm trying very hard to get healthy by making sure I get my 5 servings of veggies and 3 servings of fruit everyday, and I'd hate to undo it even a little by cooking with butter. Thanks for your help!
  • jopalei Sep 3, 2011 @ 11:21 am | delete
I've been on several of your Lenses now, and love every one. I love Brussels Sprouts, but I'm kind of getting tired of them with just salt, pepper, and butter, so I'm going to try one of these recipes this weekend. We have all of the ingredients for every one of these recipes EXCEPT the Brussels Sprouts! We just had some the other night, but we're going to the store today, so we'll pick up some more. Here's an idea for you, and feel free to use it on this Lens: It's not really a "recipe", because you can use any amount of the ingredients you wish, or add new ones of your own - so here it is: BRUSSELS SPROUT HASH: 1. Partially cooked and chopped Brussels Sprouts, 2. Potatoes, cubed and cooked, 3. Garlic, minced, 4. Bacon, cooked and chopped, 5. Onion, chopped and sauteed, 6. Salt and Pepper, 7. Chicken broth - just a little to keep everything moist.....Add everything into a pan and saute until everything is cooked through and the flavors combine. Hope you like it. By the way, if you'd like, please visit my Lenses: Food Police and Cooking QED. Thanks for the recipes!

Brussels sprouts are something that I used to feel very indifferent about. If it was served to me, all mushy and drab green, I didn't have to gag it down, but I didn't particularly love it. But now that I know they should be served still bright green, crispy, and ideally caramelized, I LOVE them. I usually have them plain, just sauted in a little olive oil, but I might add diced bell peppers and almond slivers or sunflower seeds, too.

I then add about 1/2 cup of chicken bouillion. I cook this on med high heat without a cover and let all the liquid evaporate into the bs....Let them brown a bit and then squirt a little lemon on them.........Yum is all I can say. I love the unique, almost nutty flavor brussel sprouts have. Since I'm already quite the fan, the Pan-browned recipe sounds mouthwatering already. I'm gonna try adding pine nuts as I have never tried it with them before. I also use brussel sprouts on my soup (corned beef + brussel sprouts + carrots + potato)

I've even tried growing them in 2010, but the slugs loved them even more than I do, and I shall probably never bother again! I would never have thought of doing so many fiendishly clever things with brussels Sprouts as you have set out here in your lens - I just boil or steam them, or occasionally put them in bubble and squeak if there are any left overs.

Definitely my favorite vegetable! I grew up eating them cold. My mother would boil them (but not to the mushy stage), then cool them down. She'd add olive oil and lemon and just a dash of salt and pepper and then chill in the frig for a couple of hours (this is also how we ate broccoli, lima beans, and cauliflower). I guess this is still my favorite way of eating them. I finally learned to like them warm also. Sometimes I just steam them and sprinkle a little Italian dressing on them. But your recipes sound yummy. I'm sure I'll be trying them (which is a real tribute, since I don't cook).

I love brussel sprouts, plain cooked soft but not soggy. I also like them with walnuts and bacon bits, yum yum. I once bought them frozen as it was out of season and I fancied them but it was the worst experience, they tasted horrible, save your pennies a d always buy fresh. Love the lens :)

I love brussell sprouts, but I tend not to like anything that combines them (or any cruciferous vegetable like cabbage or broccoli) with cheese. On the other hand, I think they go very well with soy sauce--just a dash. I like to saute them in canola oil with grated ginger and hot pepper, and then add soy sauce, prefably Kimlan aged soy sauce, after cooking.

Here is a tasty sprout recipe I came up with using left over spiral ham from Thanksgiving!

    1lb Brussel Sprouts
    1 Box of Farfalle Pasta
    I tbsp Olive Oil
    Salt, Pepper, Oregano
    1 Garlic Clove
    Ham or Bacon
    Butter, Milk, Flour

Start by Boiling the sprouts until they become a vivid green color (2-3 minutes).
Remove from water and cut in half. Place flat side down on olive oiled pan (with salt, pepper and garlic) or flat side up on baking sheet and bake at 375.
    Cook pasta and drain.
I used a basic white sauce recipe (2 tbsp butter and flour, 1/4 tsp salt, 1 cup milk) for the pasta.
Cook bacon or spiral ham (pork products seem to go well with sprouts) and cut into small pieces.
Cover pasta with white sauce and finally the finished sprouts and bacon.

    Enjoy!

Hey, Julie! What a surprise I got when I saw the results of your poll. You mean to say that only 6% of us dislike the little sonuvagun? He does come from a very good family, I'll grant you that; Cabbage...Broccoli...Turnip...Rutabaga...Cauliflower. I love them all! But this guy I have always found very hard to swallow. Nevertheless, you have really earned your Purple Star on this lens. Thumbs up for making me want to actually give the little &*@#! one more chance.

For Thanksgiving......I take this wonderfull veggie and fatten it up. I cook a pound of bacon and set aside. I then saute two bags of halved sprouts and some onion. I mix the bacon, sprouts and onion and put in a cassarole dish and put a can of chedder cheese on top and bake until bubbly. SO GOOD!
  • Tii Nov 24, 2010 @ 9:47 am | delete
My favorite way to cook sprouts: Stick a clove into the stem of each. Put a slice of yellow onion in a "waterless cookware" pot with enough water to barely cover the bottom; add the sprouts - whole. Cook 'til tender, drain, add butter. You may need to add salt.

Even my now-senior-citizen daughters voluntarily ate these.

I love them, they are such an underrated vegetable. Christmas is coming and these are the perfect vegetable for any table. Brussels Sprouts have changed since I was at school, in the UK they were the most hated vegetable but they are now being cultivated to have a sweeter taste, instead of the bitter variety of late. I grate mine and fry in a wok with olive oil, garlic and pine nuts, delicious. Great lens, very enjoyable read....

Last year, I found stalks of Brussles sprouts in a local grocery. I bought a stalk for a surprise Christmas gift from "Santa" along with the stockings. It went over much better than the Christmas rutabaga from a previous year. (OK, my family is weird, I know.)

I love Brussels Sprouts. My favorite recipe is oven roasted vegetables with Brussels sprouts. Cut into cubes, white potatoes, sweet potatoes, carrots, celery, fennel, onions, and halved Brussels sprouts. As much or few of these root veggies as you like. Finely chop four cloves of garlic and mix in, then toss the whole thing with olive oil and salt and pepper to taste. Roast in 400 degree oven till fork tender about 40-45 minutes. They are so good you could die from the pleasure. Loved your lens Julie.

Ok, ok, I'm taking you're word for this. You better be right! (but, no pressure of course) My mom and I were just discussing brussel sprouts; we aren't big fans. But, I want to give some of these recipes a try. Age and experience has taught me that when you say you absolutely don't like something, a recipe comes a long that changes your mind. I may try the mashed variety first...that may remedy the biggest problem I have with them.

I was raised on fresh vegies from the garden. We lived in a cool climate so growing brashicas was relatively easy... brussel sprouts were a fairly common occurrance on our table along with roast lamb , and mintsauce crispy roasted yams, roast kumera, potatoes pumpkin.
The brussel sprouts were traditionally boiled until almost mushy... not that I objected... I can eat them any old way... these days you can often see me serve them sauted with pinenuts, or tossed with slivers of capsicum, tiny bit of butter, and salt and ground black pepper .... absolutely divine... I could eat an entire pot fulll............

I absolutely love brussel sprouts, but they have to be soggy. They have a completely different flavour when overcooked. If they are still hard I do not like the flavour at all! I will try a few recipes they look great but I will be cooking them for at least 20 minutes!
  • MiaBellezza Dec 6, 2009 @ 9:33 am | delete
I love brussels sprouts, right after asparagus. Fav'd this and I'm definitely coming back to try out your recipes. They all look scrumptious!

I am a big brussel sprout fan! Go to http://www.dkpm.co.uk/sproutdown2xmas/ to guess how many sprouts are in the jar to win £250 for charity :)

Just nipping by to see what you've been up to. Another great lens! Love Brussels Sprouts with butter and garlic. Thanks for the new recipes .. I have a son-in-law who gags at the sprouts. I'll have to try some of these recipes on him. Poor lad!
  • jptanabe Nov 27, 2009 @ 10:23 am | delete
Oh yes, we always have Brussels Sprouts with our turkey! Maybe one year I'll get into something more complicated but as usual I just served the boiled and buttered version. Great lens!
  • louiswery Nov 26, 2009 @ 9:16 am | delete
Excellent lens but I'm staying with green beans!
  • ChapelHillFiddler Nov 25, 2009 @ 7:23 am | delete
Since I live alone, if I want to eat a pound of brussels sprouts for dinner nobody can complain. I steam them in the microwave a while (what used to be par-boiling I guess) and then toss them in a frying pan with olive oil, lemon, and garlic, and then sometimes I grate some cheese on top. I'm featuring this lens on my new thank-your-fans lens.
  • Squidhead Nov 24, 2009 @ 3:59 pm | delete
I love brussels sprouts. They are super good for you too.
  • theraggededge Nov 23, 2009 @ 5:21 pm | delete
I enjoy them in small quantities. We British were brought up by our grannies boiling them to death, which is why most people dislike them. Some of these recipes look awesome. Can't wait to try them - perhaps one of them will be joining our Christmas feast this year!
  • kimmanleyort Nov 23, 2009 @ 9:36 am | delete
Surprise, surprise, I adore brussel sprouts too, just buttered with salt. All of the recipes look great, but I am definitely going to try the oil, garlic, and pine nuts. Also, never have seen them mashed or in soup. Interesting.
  • AdrianaCopaceanu Nov 23, 2009 @ 8:51 am | delete
I love Brussels sprouts. My favorite recipe is really simple: toss them in olive oil sprinkle them with salt and pepper and roast them in the oven: they are absolutely delicious! And a great snack.
  • wayfarer Nov 21, 2009 @ 5:37 pm | delete
I only tried Brussels Sprouts for the first time as an adult a few years ago. What have I been missing! They are on the Thanksgiving menu this year.

When I was little, I remember telling my baby sitter that I loved Brussels sprouts. She didn't believe me. Well, I did then and i still do!
  • KimGiancaterino Nov 13, 2009 @ 11:48 am | delete
We had Brussels Sprouts last night, lightly sauteed in olive oil with fresh garlic. I bought them on the stem, so they were really fresh. Today the leftovers will go into a salad. Delicious lens!

I hate brussel sprouts but my husband loves them. Your recipes make them sound like they taste good. I might need to try this again.

It's no wonder the survey said Brits hate them, they tend to over cook everything.
Overcooking sprouts produces sinigrin, a natural gas with a sulfur-like smell. Yuk!
My husband and I love Brussels Sprouts. When cooked properly they are little bites of Heaven.
We like ours lightly steamed (to speed up the cooking process), then pan fried in grape seed oil with a few drops of sesame oil. Then add a a little fresh lemon and chicken stock and reduce They caramelize beautifully and taste great.Shallots would be a wonderful addition as well.

    My sprouts recipe:
Cut bacon into about 1 inch pieces and fry in a large skillet.
Remove the bacon and place sprouts (cut in half) into the bacon grease and add about a quarter cup of brown sugar and a tablespoon or two of lemon juice.
Let the sprouts just start browning (3 -5 minutes) then return the bacon pieces to the pan and fry a minute or two longer.

My vegetable hating stepson and brussel sprout hating hubby actually love this recipe.
  • 2Eklectik Aug 8, 2009 @ 5:37 pm | delete
My wife and I both love Brussel Sprouts. You have some nice recipes that we will have to try.
  • Sojourn Aug 1, 2009 @ 10:18 am | delete
Too funny! In my family, only the men eat them - both my dad and my father-in-law love brussels sprouts while the rest of us think they're strange. These recipes will come in handy when we have either of them over for dinner now. Although, I must admit, my dislike stems from childhood where I was such a picky eater it was horrible. I imagine if I tried them now as an adult I'd actually like them as I love most vegetables. Hmmm...I think I should give them another chance! :)
  • hlkljgk Jul 16, 2009 @ 12:26 pm | delete
thanks for the ideas - i totally have to try them mashed.
  • Suzie-Shine Jun 23, 2009 @ 10:00 am | delete
You've managed to make Brussel Sprouts interesting, which is some task as far as I'm concerned. The boyfriend likes them, I don't. But now I'll be able to tart them up a bit and, who knows, may fall in love with them. Okay, maybe not quite love.
    Suzie.
  • ChapelHillFiddler Jun 20, 2009 @ 11:00 pm | delete
Nobody in my family but me will eat them so sometimes I just cook a bag for myself. I split them in half, put them in a frying pan with a little olive oil and garlic, and a little wine or lemon joice or water, cover them and steam them a while, then take the lid off and brown them. Mmm. Mmm. Thanks for the lens!
  • MUMMYB Jun 19, 2009 @ 11:15 am | delete

Funny - I remember as a kid trying to choke down some brussel sprouts that were part of a restaurant dinner...and my parents were members of the "clean your plate society"...I HATED them (the brussel sprouts) ;o)

Now...gimme a little butter, some salt...lots of pepper...YUM! Funny how tastes change. Great lens - will try some of those recipes...maybe just maybe I can get my kids to like them! HA!

I am going to give you 5 stars on this lens for doing a great job of trying to entice me to eat one of my most hated vegetables since childhood. I swear, I think I actually had nightmares about being force fed Brussel sprouts. It was one of the veggies that I used to try to hide under the mashed potatoes or worked to feed to the dogs under the table, but they weren't going for it either! lol.

These are great looking recipes! I have to admit, of almost all veggies, brussels sprouts are the most tough for me to eat. I love most others, but this one is difficult. Maybe I might like it better smashed. I'm lensrolling this to my veggie recipes lens.
  • AlishaV Jan 15, 2009 @ 12:27 am | delete
I think I read somewhere that there's a certain chemical in Brussels sprouts and related veggies that some people can taste and others can't and that's supposed to be the reason some people love 'em and others can't stand them. I obviously can't taste the chemical since I adore Brussels sprouts and am marking this lens as a favorite so I can make sure to try some of these great sounding recipes. My cats on the other hand disliked them so much they invented a game I call Brussels Sprouts Soccer: http://www.ehow.com/how_4715235_play-brussels-sprout-soccer.html

I can honestly say that I have never tried a brussels sprout in my life. I am usually down to try anything once, but I'm still not sold on the brussels sprout.

Goodness knows why I read this lens as I don't like Brussel Sprouts. Must be a sadist or something! As worthy and interesting as your recipes and information are I'm still not convinced as to the delights of Brussel Sprouts. I suppose, being a vegetarian, I should try to get to like them.

Guess all of our taste buds vary. Great lens.

Sprouts are a once a year affair for me on Christmas day. I think the Lord gives me the strength to eat them just because it's his birthday. There is no other explanation. I hate those cabbage wannabes!
  • RichLeigh Nov 21, 2008 @ 6:41 am | delete
They might be Britain's most hated vegetable, but I personally as an atypical Brit absolutely love them! A few years back for Christmas dinner my Aunt put a load of brussels on my plate thinking it would be some sort of cruel Christmas prank; it kind of backfired though when I happily tucked into them whilst much of the rest of the family cringed at my love for the vegetable!

Nice lens, and I too (in case you hadn't already guessed) love brussels sprouts... and broccoli and cucumber for that matter!

I have two brussel sprout mysteries to solve. 1. When I pickle them they develop a slight pinkish cast in the interior and I'm wondering what causes this. 2. This year when I made pickled sprouts with garlic and dill they developed a sulphurous odor that's very noticeable when you open the jar. This has not happened in the past. Any idea as to what's causing the odor and why this time but not with other years batches of pickles?
