Traditional Cake from Medimurje

Delicious, healthy and simple. What else do you want from a cake? I have found the recipe of this traditional Croatian cake on one of my favourite cooking site, crochef.com. You need only a few ingredients, 45 minutes (including baking time), 2 bowls and the baking pan to prepare this cake. As you see, washing the dishes will not take too much time, either.

What is buckwheat?

buckwheat groatsDespite of its name, buckwheat is not a cereal and not related to any other wheat. It is a fast growing plant with triangular seeds which can be prepared in similar way to rice or milled to make buckwheat flour.
Dishes from buckwheat is widespread in Asia (e. g. Japan, Korea), Russia and some eastern European countries such as Poland, Hungary and northern Croatia. The dish kasa (or kasha) which generally refers to porridge made from buckwheat, barley, rye etc. used to be very common among peasants and poor people. Although buckwheat dishes have been gradually pushed into the background in recent decades, as healthy lifestyle becomes more and more popular, this forgotten ingredient appears again in the kitchens.

Health benefits of buckwheat

Did you know that buckwheat is high in fiber, rich in omega-3 fatty acids, B vitamins and contains 8 essential amino acids?

Medimurje

Cakovec Zrinski castleRolling hills, flower-filled meadows, river banks fringed by swaying willows - this is Medimurje, the home of this buckwheat cake. Bordered by two rivers, Mura and Drava, this less-travelled part of Croatia is a blend of Croatian and Hungarian traditions.
The seat of Medimurje county, Cakovec offers a compact old town with baroque facades, churches and a 13th century castle, once the nest of the Zrinski counts.

I went back to college in the winter time in my native state of Iowa; a small little community college in a town with a population of 2000 people. I rented an apartment from my dad's uncle that was 3/4 of a mile from the college campus. I only needed a few classes to complete an Associates of Arts degree I had not finished from 5 years earlier.

Anyway I lived on buckwheat pancakes that winter, delicious!!!!!! I never knew they were so healthy though. I do remember they had more texture than the normal buttermilk pancakes I grew up eating. I was never too much into a 'thick' pancake, prefering to spread them out on the pancake griddle they were cooking on.
Your traditional cake above looks like an egg omelot, I would love to try this.
Today is Thanksgiving here in the USA, Happy Thanksgiving!
