Delicious Buko Pie (Young Coconut Pie)
I am sharing with you the recipe for that wonderful buko pie. The recipe uses young coconut meat which is called buko in Filipino.
Buko Pie Crust

Ingredients
- 2 cups all-purpose flour
- 1/3 cup vegetable shortening
- 1 egg yolk
- 1 tsp. vinegar
- 1 tsp. salt
- 1/4 cup ice water
- 1/3 cup butter
Instructions
Combine the flour and salt using a sieve.
Add the butter and the vegetable shortening and using a mixer, mix them together.
Slowly add the cold water a teaspoon at a time as the mixer is working.
After everything has been mixed, divide the dough into two equal portions.
Flatten each of the dough and roll into rounds wide enough to fit an 8" cake pan.
Place one rolled-out dough on the bottom of the cake pan. This is the base crust of the buko pie.
Place the second rolled-out dough aside.
Buko Pie Filling
Ingredients
- 4 cups young coconut meat or buko meat
- 3/4 cup granulated white sugar
- 1/2 cup young coconut water
- 1/2 cup cornstarch
- 1/2 cup evaporated milk
Instructions
Heat the milk in a sauce pan until it boils.
Add granulated sugar and stir until it dissolves.
Add the young coconut (buko) meat and let it cook for about 4 minutes
Dilute the cornstarch in the young coconut water. Pour it into the pan. Continue stirring and cook until the mixture is thick.
Turn off the heat and let the mixture cool.
Buko Pie Assembly
Take your dough-lined 8" baking pan and fill it with your filling.
Put the second piece of dough on top and seal the sides with a fork.
Put some holes on the top crust using a fork. The holes are to help prevent any deformation on the pie crust.
Bake the pie in the preheated over for 45 to 50 minutes or until the top turns golden brown in color.
Take the pie out of the oven and allow it to cool.
Serve.

- Have I mentioned how much I love your recipe lenses? This one sounds wonderful! I'm glad that the ingredients are available on Amazon--I've never heard of "young" coconut. But any recipe that has coconut in it has to be good! (and I got to be the first to like this lens!)
