Burritos - Compact Meals Full of Flavor! Muy Sabroso!

During our first year, we lived in a very small, mostly Hispanic community in the New Mexican "high desert". Since Carrizozo was so small, many of our neighbors were ranchers who lived a few miles down the road in either direction of the four-way stop in the middle of town. As we got to know our neighbors, they'd invite our family over to their homes for parties and other get-togethers--and we learned about the different kinds of burritos and some of the special ingredients they'd add to them to make them the most savory "muy sabroso" delicacies.
The following year, we added to what we had learned about burritos with other and new variations after moving to a larger town, Alamogordo, about 60 miles south of Carrizozo. From Alamogordo, we would regularly drive to El Paso, Texas at least once a month to get certain groceries and things that we weren't able to get in our own town.
After six years there in Alamogordo, we did take a detour in our lives -- and we moved to the tropical island of Guam. Luckily, there was at least one Mexican restaurant on the island, so we could get our need for an occasional burrito meal satisfied.

Renewed Interest in Burritos! Muy Sabroso! Very Delicious!
But after a while, we moved to Albuquerque, New Mexico, where we learned about new types of burritos--new ingredients and different styles of serving the yummy meal.
Here are some of the main types that I enjoy:
Bean Burritos
Generally the easiest and cheapest one to make. All you need is a tortilla and some refried beans (you can get these pre-cooked and canned). You can also add extra goodies such as maybe some chopped onions, grated cheese (Cheddar and/or Monterey Jack), some jalapeno or sorano peppers (depending on how hot and spicy you like your burritos), and salsa or sauce (green, red, mango).
Chicken Burritos
These burritos are also fairly simple. Get a tortilla, and you can get prepackaged chicken, or get a rotisserie chicken from your local market, or just cook your own chicken and then get some meat off of it. This would be your basic "chicken burrito". Then you can add some extra fixin's such as spiced rice, onions, grated cheese, jalapeno or sorano peppers, and salsa or sauce.
Beef Burritos
These burritos can be assembled with the tortilla and with left-over roast beef or perhaps pre-cooked ground beef (hamburger meat). Again, add extra goodies such as the onions, the cheese, the sauce, and peppers to spice it up a bit.
Breakfast Burritos
Ah, the proverbial "breakfast burrito" -- this is one of my favorites. Start with a nice warm tortilla. In a separate pan, cook up a bunch of scrambled eggs, some hashbrowns, and maybe any of the meats--ham, bacon, chicken, beef, sausage. Then, if you want an authentic "New Mexico" taste, mix the scrambled eggs, hashbrowns, and meat with some verdolagas and some Hatch or Ortega green chile... and then fill and roll the burrito with a ladle or so of the mixture. You can eat this delicious meal like this by picking it up with your hands; or, you can just lay them on your plate and slather more burrito chili sauce over them--for a more refined meal.
