Everything you wanted to know about Butter Chicken & How to make the Best Butter Chicken
Anyone who loves Indian food - both eating and cooking - particularly non-vegeterian fare, knows that the holy grail of chicken dishes is the BUTTER CHICKEN. Yes all you Chicken tikka and Tandoori Chicken fans can eat your heart out, but Butter Chicken is really the tops.
Since I love this particular dish so much, I tend to order this in almost every restaurant I have ever visited just to enjoy the various flavours. It's different in almost every restaurant, probably one of the few dishes with such a variety.
I have eaten butter chicken across a host of restaurants ranging from Mumbai City to Chicago. What I intend to do here, is to provide all you Butter chicken lovers the various recipes I have come across and also try and locate the restaurant that serves the best Butter Chicken in the world.

Butter Chicken is a Two in One Dish
Origin of the dish as per folklore

Well the origin of this dish is fairly debatable. But as per popular folklore, to many a surprise, this delicacy wasnt invented in India but rather in Great Britain, albeit by an Indian Chef.
It is said that an Englishman was served Tandoori Chicken, but he complained that it was without any gravy. To deal with this predicament, the Indian chef conjured up a creamy and smooth tomato curry and dunked the tandoori chicken in it. Thus was born the wonderfully yummy butter chicken.
Therefore, in essence you gotta be preparing Tandoori Chicken first before you get to the delicious Butter Chicken.
So it's not one dish but two, mixed with the lovely smooth creamy tomato curry sauce to delight your taste buds.

How to make butter chicken - The Chicken

Well for those who are really into butter chicken, the chicken has to be just perfect. You must use your tandoor/oven to get the best and authentic result. You will find recipes that will show you how to prepare this delicacy without the oven,but that will be a compromise.
Step 1 - Prepare the Marinade (there are a host of different recipes below for the preparation- so not going into details)
Step 2 - Always marinade overnight for best results
Step 3 - Roast it in the tandoor/oven for approx 5-10 minutes
Phew - wasnt that simple.

How to make butter chicken - The Gravy

This is the buttery part of the dish. A smooth, creamy and yummy gravy is the heart and soul of this preparation.
Must haves
- Tomato puree for the base
- Butter & Cream for the smoothness and texture
- Sugar and Red Chilli powder- this you can vary to suit your palate
- The Spices- Ginger Garlic paste, Cinnamon stick, Cumin seeds, Bay leaves, Cardamoms - Get creative
- Garam Masala powder - for the indian touch
- Cashewnuts/Almonds pastes for the thickness and the richness - this is my favourite.
Get the basics right. Experiment with your own spices and you will get your own lovely delicious gravy

The Garnish
This one was just for fun. You can experiment with your garnishing.

Cheeeeese
Coriander leaves
Fenugreek or Methi
Experiment- use your own

A Human Dilemma
Need your help
Oops this lens is hitting bigtime. I broke into the top 150 early this week and its hovering around the top 500 now. Since this lens donates 100% to charity -the devil inside me says to switch to cash. My conscience doesnt allow me to do so. What do you fellow Squidoo - ers say?
Update - Taking advice of fellow squidooers - I have switched to 20% Charity and 80% cash.
What should I do with the payment settings on this lens?

Give a certain percentage to charity...I usually do 20 or 25%...and then the rest to cash. If and when I start to earn lots of money I will donate more.

I would never presume to tell anyone what to do when it comes to possibly making residual income. I, myself, am maintaining 100% charity for my lenses now and forever, but hey, if you can make a buck, why not?

If you think of squidoo and lenscrafting as a business then you should keep the cash. If you are doing this solely for the love of butter chicken and the passion to share this tasty dish then donate to charity. For me, they both coincide. So what I do is I split my earnings - some charity and some cash. Decisions like these are always difficult.
