Butterscotch Crunchies Recipe
I don't remember where it was that I saw this recipe some years later, but I tried it and it was just like the Butterscotch Crunchies that I remembered. My family loves these. The Butterscotch Crunchie recipe has only three ingredients. I think you will find it pretty easy to make.

A large mixing bowl
A 9 x 9 x 2 pan
2 sauce pans, a double boiler, or a microwave

Ingredients
- 3 cups Rice Krispies
- 6 ounce package butterscotch chips
- 1/2 cup peanut butter
Instructions
1. Place cereal in a large mixing bowl and set aside
2. Melt over hot, not boiling, water, the butterscotch chips and peanut butter, stirring constantly until smooth.
If you have a double boiler you can use that. If not, put the water in a bigger pan and set a smaller pan over it for the butterscotch chips and peanut butter. Make sure not to get water in this mixture.
If you are accustomed to using the microwave for this sort of thing, then that is ok too.
3. Pour this mixture over the cereal, stirring until well coated.
4. Press into a buttered 9 x 9 x 2 inch pan.
5. Chill until firm, about 1 hour
6. Cut into 1 ½ " squares
NOTE: I usually double this recipe and use a 9 x 13 inch pan.

I prefer Butterscotch Crunchies with no chocolate on top. I do love chocolate but in this case I like the butterscotch and peanut butter flavors to be predominant.

As seen in the intro picture, you can top the Butterscotch Crunchies with chocolate if you so desire. Drizzle on some chocolate or melt some chocolate chips and pour it on thick!

- I substituted Cheerios for the Rice Krispies and they turned out pretty good! The original would be better, but I used what I had on hand. I think I'll stay off the bathroom scales for the next few days. . .
