My Favorite of the Cabbage Soups

Cabbage and Sausage Soup

This recipe makes eight servings, but is easily adapted by simply multiplying or reducing the ingredients for the size of your family or group.

Ingredients

Cabbage

1 Head of Cabbage

Beef Broth

64 ounces of beef broth

2 - 32 ounce packages of beef broth
or
Make your own broth.

Spices

Season to taste with ground cumin and black pepper.

I use about 1 teaspoon of cumin.
(a little cumin goes a long way so add it a little at a time until
you get the flavor you prefer)

Sausage

1 Package Smoked Turkey Sausage

14-ounce Package of Smoked Turkey Sausage

How to Cook Cabbage Soup

Step 1 - Chop Up the Cabbage

Peel off the outer leaves. Rinse the head of cabbage with water. Cut head in quarters. Remove core. Chop each quarter in narrow slices of about half an inch.

Step 2 - Slice the Sausage

Slice 10-12 ounces (depending on how meaty you like your soup) of the smoked turkey sausage into thin coins.

Step 3 - Add Broth and Cabbage to Cooking Pot

Pour beef broth into cooking pot (I'm using a 4-quart pot here). Add cabbage slices.

Step 4 - Add Sausage and Seasoning

Add sausage slices to broth and cabbage mixture. Stir to mix ingredients together. Sprinkle in cumin and pepper seasonings. Bring to a gentle boil. Reduce heat. Simmer until the cabbage is tender (about 20 minutes). Remove from heat and serve.

Step 5 - Enjoy!

    Yummilicious! I tried making cabbage soup one day and that was the last ever day I thought about it :D It is soo good for the body, might try your recipe soon when the cabbage mood hits me.

    Your cabbage soup is so much better than the one my sister made back in 1973 when I stayed with her while she was in college on a student's budget.....she used chicken kidneys in the soup to save money...never did that again I'm sure. Your recipe with sausage is perfect!

    I made a cabbage soup the other day, it actually was a "refrigerator clean out" soup, I took all the vegetables that where in the veg-bin and decided to make a soup...cabbage, cauliflower, zucchini, onions, carrots, and spices. Then on the second day I added Hebrew National hotdogs ....it was delicious...believe it or not, it was not gassy.

    We love cabbage and use it frequently in a variety of soups. We especially like it with potatoes, carrots, onions, Italian sweet sausage and lots of garlic. Your recipe looks divine. I'm salivating thinking about it with some crunchy whole wheat sourdough baguette slices.

    I love cabbage so this intrigues me, being a vegetarian I will need to make a few substitutions like maybe potatoes instead of sausage and veggie broth instead of beef...hmmm...maybe even some tomatoes and onion. Thanks for inspiring me! :)

    We love cabbage soup! I find that cabbage really adds a whole lot of sweet flavor to any soup. I find kielbasa to my favorite sausage to use for soup recipes because of its garlicky taste. Chorizo is also a favorite of mine.

    Great cabbage soup recipe lens! I love cabbage soup and make it several times over the winter months. Polish sausage and red potatoes are added to mine most times.

    Hope you get the chance to try it. I cooked up a pot of this soup earlier this week and enjoyed it so much that I am ready for another batch of it today. The nice thing is that one head of cabbage and one package of sausage provides me with four meals.

    Oh I love cabbage and I also love cabbage soup. My favorite cabbage dish though is 'toltott kaposzta', a Hungarian dish, I think in English is called stuffed cabbage?
