Centering the cake

Let your cake cool completely before frosting. Trim off any crispy edges with kitchen scissors. If there are any loose crumbs brush them away. Remember to center your cake on the plate. Using a turntable or the top of a large bowl will help get around the cake easier. Spread frosting with a spatula, knife or broad bladed knife.

Pans

Using the right pan

For best results use shiny metal pans. Avoiding the dark and dull pan or the enamel pans they may cause uneven baking and excessive browning. Lower the oven temperature by 25*F if you are going to use aluminum pans with a non stick finish.
Grease and flour the bottom and sides of the pan generously, turn pan over a shake excess flour loose. No need to grease pans for angel, sponge and chiffon cakes.
