Cake Tips:
- Pound cakes freeze nicely. Make an extra one when you do one and freeze it. It's great for unexpected company. Thaw and top with fruit, ice cream or dessert sauce.
- When making an Angle Food Cake from scratch add part of a package of your favorite flavor gelatin to the flour before it goes into the egg whites. It adds great flavor and a pretty color.
- In a hurry and don't have time for frosting, sprinkle confectioners' sugar. For an extra pretty touch place a doily on top of the cake before shifting the sugar over the cake.
- Dental floss or heavy-duty white thread is just the trick to slice a cake layer in half horizontally instead of a knife. Using a 2-foot piece of floss or thread pull it toward you using a sawing motion through the center of the cake.
- Add chopped nuts or chopped candied cherries into pound cake batter. This added touch makes it nice for gift giving.
- Just before placing a cake in the oven to bake you need to make sure there is no air pockets. Two tricks are running a knife through the batter and then also gently drop the pan on the table.
- Cakes bake more evenly reducing the dome effect in the middle when you line the bottom of your pan with parchment paper. It needs to be cut to the exact measurements. A plus is that it is easy to remove the cake from the pan and less cleanup.
- A good method to tint coconut for topping a cake is to combine a few drops of food coloring with a few drops of water. Then add a couple of tablespoons of shredded coconut and toss with a fork until coated.
- Weigh each layer to make sure you have the same amount of batter in each pan. The layers will always come out the same size.
- Good quick banana frosting empty a container of prepared white frosting into a small mixing bowl and beat in pureed banana.
- A cake bakes best in a hot oven so preheat your oven for at least 10 minutes before baking. Also, don't frost the cake until it is cooled to room temperature. Sometimes there are exceptions to this but your recipe will advise.
- Always use cake flour and always let the eggs warm to room temperature for higher and lighter cakes.
Aunt Beulah's Oatmeal Cake

Oatmeal Cake
1 ½ Cups Boiling Water
1 Cup Quick Cook Oatmeal
½ Cup Oil
1 Cup Brown Sugar
1 Cup White Sugar
2 Eggs
1 ½ Cup Flour
1 Tsp. Baking Soda
1 Tsp. Cinnamon
½ Tsp. Salt
Combine the oatmeal and boiling water and stir well. Let stand until cool. Combine oil, sugar and eggs. Mix well. Sift flour, soda, cinnamon and salt together and add the flour mixture to the batter alternately with the oatmeal. Mix well and bake in a 9 x 13 inch greased pan at 350 degrees for 35-40 minutes.
Topping:
1 Cup Brown Sugar
½ Cup Evaporated Milk
1 Stick Butter or Margarine
1 Can Coconut
½ Cup Chopped Pecans
Boil the sugar, milk and margarine for 5 minutes. Remove from heat and add the coconut and pecans. Pour over the cake while it is still warm and put under broiler until brown.
Cake Pans
Minute Chocolate Mug Cake
4 tablespoons flour(that's plain flour, not self-rising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
Small splash of vanilla
Add dry ingredients to mug, and mix well . Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla, and mix again. Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired.

- Cake is my FAVORITE dessert and we are always baking up something in our house. If you are like me and don't have time to always bake from scratch, I highly recommend the cake mix doctor cookbook which is full of recipes that utilize cake mixes. Your chocolate mug cake sounds quite good...I'll have to give it a try. A yummy 5* lens
