Candied sweet potatoes are a side dish consisting mainly of sweet potatoes prepared with brown sugar, maple syrup, molasses, or other sweet ingredients. Many also add marshmallows to theirs. 

Often served on Thanksgiving and/or Christmas, this side dish represents traditional American cooking.

 Candied Sweet Potatoes




  2 Sweet potatoes
  1/2 c. Brown sugar
  2/3 c. Syrup


 1/4 c. Molasses
 non-stick cooking spray
 1/2 teaspoon Salt





  Step 1: Scrub and boil in salted water whole sweet potatoes until just tender.

  Step 2: Drain, peel, and cut potatoes into 1/2" slices.
  Spray (electric) frying pan with non-stick cooking spray.
  In (electric) frying pan, put a layer of potatoes across the bottom.
  Sprinkle with a thin layer of brown sugar and syrup.
  Cook uncovered, turning as necessary.

  Baked Candied Sweet Potatoes




  8 Sweet potatoes
  1/3 cup Brown sugar
  1/4 cup Butter


 1/2 teaspoon Salt
 3/4 cup Marshmallows
 





  Step 1: Scrub and boil in salted water whole sweet potatoes until just tender.

  Step 2: (25-40 minutes). Preheat oven to 375.
  Drain, peel, and cut potatoes into 1/2" slices.
  In 1 1/2-quart casserole layer half each of the potatoes, brown sugar, butter and salt.
  Repeat layers and bake uncovered for 30-40 minutes or until glazed.
  Sprinkle marshmallows over top. Bake about 5 minutes more until lightly browned.

 Yield: 6 servings
