Candy Bar Peanut Butter Cookies Recipe

Ingredients
- 1 cup butter
- softened
- 1 cup granulated sugar
- 1 cup firmly packed brown sugar
- 1 cup creamy peanut butter
- 2 large eggs
- 1 tsp. vanilla extract
- 2 cups all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 36 bite-size snickers (or other candy bar)
Instructions
1. Beat butter, granulated sugar, brown sugar, and peanut butter at medium speed with an electric mixer or stand mixer until smooth. Add eggs and vanilla. Beat until blended.
2. Stir together flour, baking soda and salt in a small bowl. Add this mixture to the butter mixture. Beat until blended. Cover and chill for 30 minutes.
3. Preheat oven to 350 F. Using lightly floured hands, wrap each candy bar with about 2 Tbsp. of dough. Roll into balls. Place each ball 3 inches apart on ungreased or parchment paper-lined baking sheets.
4. Bake at 350 F for 13 to 14 minutes or until lightly browned. Let cool on baking sheets for 5 minutes. Transfer to wire racks for continued cooling.

My girlfriend and I use the 4.5 quart stand mixer to make these cookies, but I would recommend the 6 quart if you have the room and need of it. Using a stand mixer makes it much easier because all you have to do is just add the ingredients, the mixer does all the work. It is definitely worth the investment if you bake at all.
