Oh so easy candy corn confection!
Every September I begin to prepare for Candy Corn Day which is on October 30th by looking for new recipes! Oh, in some places it is on October 21st, but I am not against having a celebration twice in 10 days. No sir, you will not hear me object.
I have become so obsessed with this candy confection that I have even "designed" Candy Corn Halloween costumes.. There are even more candy corn recipes on that page! (see links to the right side of this page)

Here's the Recipe for Candy Corn Cupcakes
Original cupcake recipe and design idea from Kaboose.com
- Serves: 16
- Prep Time: not long, maybe 15 minutes
- Total Time: About an hour, max.
The original cupcake recipe is from Kaboose.com. You can visit that site for the cream cheese frosting recipe that they used on their cupcakes. I used pre-made Duncan Hines Cream Cheese Frosting to make it easy on myself. After all, I am a grandmother.
Ingredients
- 2 cups sugar (I use organic)
- 4 eggs (I use Eggland's Best)
- 2 1/2 cups all purpose flour (I use unbleached flour)
- 1 cup milk (I always use fat free milk)
- 3/4 cup vegetable oil (canola is on my shelf)
- 2-1/4 teaspoons baking powder
- 1 teaspoon vanilla
- divided
- 1/2 to 3/4 teaspoon orange gel food coloring (on the baking aisle or in the "party" section at WalMart)
- Premade Icing - vanilla or cream cheese (or you can make your own)
Instructions
Preheat oven to 350 degrees F. Line 2 (12 cup) cupcake pans with 16 cupcake liners
In a large mixing bowl, with an electric mixer, beat sugar and eggs together until slightly thickened, about 1 minute.
Add flour, milk, oil, baking powder, and vanilla and beat for another minute, just until the batter is smooth and creamy. Don't over beat.
Place approximately 1/3 of the batter into a separate bowl. Add orange gel dye to the reserved batter and mix well.
Fill each muffin liner with 2 tablespoons of plain vanilla cake batter. Layer over 1 tablespoon of orange-dyed batter onto each. Using a toothpick, gently drag the orange batter through the plain vanilla batter, creating a streaked look. Do not over do it or batters will blend together.
Bake in preheated oven for 25-30 minutes or until the tops are golden and a toothpick poked into the center of the layer comes out clean.
For a artsy presentation, place frosting into a zipper-type plastic bag with the corner snipped off. Pipe icing onto each cooled cupcake and top with a couple of candy corns for each cupcake. I just "artistically" dolloped a spoonful of icing on each cup cake.

Kaboose.com: the original inspiration for these cupcakes
Amazing what one can find on the internet when one googles "candy corn recipes". This recipe from Kaboose.com was so yummy looking, I just had to try it. Mine turned out good enough to please my grands and neighborhood kiddies on Halloween.

Not a pretty, but just as edible!
I do not have the tools to pipe on a decorative icing mound, but I think my cupcakes turned out just fine, thank you.
I used Jelly Belly Candy Corn because it is a much prettier and tasty confection than the bargain brands. Yes, it costs more, but their nuggets are worth the extra pennies you pay. I found my candy corn in our local supermarket, Publix, in the Jelly Belly display. I purchased it loose instead of in prepackaged bags.

Honor the "Corn Belt" States
- Michigan -- celebrate this state on January 26th. It became the 26th state in 1837.
- On May 11, 1858, Minnesota entered the Union as the 32nd state.
- South Dakota has the Corn Palace Festival the end of August every year. Take some of these cupcakes with you on the road trip!
- Wisconsin became a state on May 29, 1848. This state's official grain is.....Corn. Celebrate.

- I only seem to like candy corn around Halloween. That's a good thing because if it were available more often, I'd be in so much trouble!!! Your cupcakes sound scrumptious. Will have to give them a try!
