Isn't canned fish just so useful? This thought popped into my head as I was preparing a tuna mayo sandwich for my daughter's lunchbox. There are always several cans of tuna in my kitchen cupboard, along with cans of mackerel and anchovies. I don't know what I'd do without them. They're useful for quick snacks or as an ingredient in a dinner recipe. You can have canned fish on toast, on pizza, with pasta, with salad, on a baked potato, in a casserole and more. And, as well as tasting delicious, canned seafood is a great source of protein. Convenience, taste and goodness - what could be better? Stock up!

Warm Pasta and Tuna Medley 

A quick, easy and very tasty supper dish

The great thing about this recipe is that you can make it to your own taste; the quantities given are a guide. If you don't like some of the ingredients, omit them. If you love some of them add more. This will serve 4, but it's easy to make smaller or larger quantities.

Chop 6 ripe tomatoes and place in a large salad bowl. Add a drained 6-ounce can of tuna, about 12 chopped black olives, 8 ounces of cubed mozzarella cheese, 1 1/2 ounces capers (caperberries) and a handful of torn basil leaves. Season with salt and pepper then add a good pour of extra-virgin olive oil, enough to coat all the ingredients well.

Leave to sit while you cook one pound of pasta shapes, like penne or fusilli, in a large pan of boiling salted water until done.

Drain the cooked pasta, then add to the bowl and toss with the cold ingredients. Add more olive oil and seasoning to taste if you wish.

The medley will be warm, not hot, and that's how it should be. Enjoy!
