Choose covers that fit as snuggly as possible. Too loose and they'll just annoy you because you'll always be getting tangled up. You'll eventually just take them back out of the car. If you want protective seat covers that also provide some comfort and warmth then lamb's wool is a nice choice. However, if you're also carrying pets in your car they're a bad idea. You'll have pet hair every where and it won't come out.
