Carmel Apple Cupcakes- What are you talking about?

While I was trying to come up with an idea for Sunday's SquidBOO Challenge I thought Carmel Apples! I LOVE cooking and preparing food with apples! I will experiment with apples like I do everything else. Why do you think they call me the Mad Scientist of Cooking? Than I was thinking, well if I can make a Strawberry Shortcake Cupcakes, why couldn't I make a Carmel apple cupcake! SO.. I decided to create this lens.

I have not cooked them (yet) but the thought just sounds so yummy to me. So let's start with a basic yellow or white cupcake and let's cook the apples!

I am telling you, this is a must have in my kitchen. At first I never dreamed of having one, but after seeing how smooth my applebutter turned out, this is a must have in this "Mad Scientist of Cooking's" Kitchen!

type=textFor me apples, autumn and Halloween all go together. If you do not smell Vanilla Hazelnut in my house, you will smell apple and spices! I cook a batch of applebutter every Autumn and can it. I know it is getting close to Autumn now because I only have one jar of Applebutter left. So let's cook some apples for these cupcakes!

I love tart apples so I mix them when I cook apples!

2-Grannysmith Apples
3-Macintosh Apples

Peeled and cubed

In a large fry pan add apples and ¼ cup of unsweetened apple juice. Cook until tender.

Add ¼ cup of brown sugar (maybe more it depends how sweet you like them)
1 tablespoon of unsalted butter
¼ to ½ teaspoon of the following spices:
Cinnamon
Allspice
Nutmeg
1/8 teaspoon of clove

Stir everything together and if it is not spicy enough add a little cinnamon and nutmeg.

Now the fun part!!

Use your Hand Blender and smooth out the apples.

Take your cupcakes and hollow out the top a little like I did with the Its not Dunkin Donuts Cupcakes and fill them with the apple mixture.
In a double boiler, melt down some carmels. Drizzle the carmel over the top of the apple filled cupcakes, top with chopped nuts and there my friend you have a Carmel Apple Cupcake!!
