The Story Behind this Recipe
This story is nothing quite fancy or adventurous. I suppose this is a part of my past that I took along with me when I transitioned from being a single woman to a married woman. When I was about to get married and move to the States, it was then that it occured to me that I do not know how to cook! Nothing more than the essentials atleast. I certainly dont do desserts (normally I would just buy them or my grandmother would make them) But now if I am abroad, I would need to do it for special occasions. As overwhelming as that was, my best friend's family helped me out with a simple recipe, just to show me how easy it would be. And this carrot halwa recipe is one of them.Not only did this recipe make me at ease that these recipes are easy to handle, it also gave me some confidence that I can enter the world of marriage and migration all by myself. So now 5 years later, I still make this dessert each time I want to do something traditional, or for a potluck or a special occasion.
So now, let us take a look at the recipe. The recipe that helped me look forward to the future with less fear and more hope.

Make Carrot Halwa
This is the recipe that I use to make Carrot Halwa with great memoriesIngredients
2 pounds of carrots - shredded very finely
2 large scoops of ghee
cashew nuts
raisins (optional)
cooking oil
1 Litre Water
Sugar - Around 5 Large Serving Scoop or more (according to taste)
To Make Carrot Halwa
1. Heat the Oil and Ghee and wait till it gets hot.
2. Add in the nuts and raisins and let them fry
3. Pour in the water and let them boil together.
4. Add in the sugar and keep stirring till you see a golden tint.
5. Add in all the carrot and keep stirring
6. The Stirring would continue from time to time until the entire carrot mixture becomes a cake with almost no water left.
7. Allow the entire carrot halwa to cool and it is ready to be served. Carrot Halwa can be served warm or after it has been cooled in the refridgerator.
