Tasty Casserole Recipes That Are Easy To Prepare

I have always loved making casseroles as you can often get a whole meal in just one dish. As it seems like our lives are always busy, it is important to be able to prepare fast and simple meals that are both nutritious and delicious. I hope these recipes will help make your meal preparation easy and your tastebuds happy.

Beef and Bean Casserole

Super simple with only 4 ingredients.

1 1/2 lbs. ground beef
1 large onion, chopped
2 - 20 0z. cans of baked beans
1 1/2 cup ketchup

Brown hamburger and onion. Combine with beans and ketchup. Pour into baking dish and bake at 375 degrees for 30 minutes.

Chicken Casserole

2 chickens
salt and pepper
1 bag noodles
2 cans cream of mushroom soup
2 cans cream of celery soup
1 small pkg. frozen peas
1 bag potato chips, crumbled

Cook chickens, salt and pepper in a large pot covered with water until done. Debone and set aside in bowl. Cook noodles in boiling water remaining in pot until almost done. With slotted spoon, place a layer of noodles, chicken, mushroom soup, celery soup and peas in baking dish. Layer above until all ingredients are used. Add 2 cups broth to dish. Place chips on top. Bake at 350 degrees for 1 hour.

Chicken Herb Casserole

6 cups cooked chicken, cut up
1/2 cup chopped onion
1 cup chopped celery
1 1/3 cup evaporated milk
2 cans cream of mushroom soup
2 cans chicken rice soup
1 large can chow mein noodles
1/2 to 1 cup chopped almonds
2/3 cup margarine
1 cup herb stuffing mix

Mix chicken, onion and celery. Add milk, soups and chow mein noodles;mix and pour into 2 buttered casseroles or a large 12 x 18 inch pan. Bake at 350 degrees for 1 to 1 1/2 hours. Saute almonds in margarine; add stuffing mix. Spread on top of casserole the last 1/2 hour of baking. Serves 24 (Divide in half for smaller amount).

Hamburger Noodle Casserole

It doesn't get much easier than this.

1 lb. ground beef
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1 can cream of mushroom soup
1 can cream of chicken soup
2 soup cans of water
8 oz. pkg. of noodles
Salt and pepper to taste

Break up raw ground beef and stir in onions and celery. Add soups, water, uncooked noodles, salt and pepper. Stir mixture well. Pour into a large casserole. Bake at 350 degrees for 1 1/2 hours or until done. Yield: 6 servings.

Handy Kitchen Tip

When boiling rice, noodles or spaghetti, add a few teaspoons of cooking oil or a lump of butter to prevent them from boiling over.

Hamburger Potato Casserole

Meat and potatoes all in one dish.

1 lb. hamburger
2 cans cream of mushroom soup
1 1/2 cups grated cheddar cheese
4 to 5 potatoes
1 soup can water

Brown and drain hamburger; season to taste. Place sliced potatoes in casserole dish. Cover with hamburger. Pour soup mixed with water over hamburger. Bake uncovered at 350 degrees for 1 hour. Top with cheese and bake for additional 30 minutes.

Hungry Man Casserole

Will satisfy your hungry guy.

1 1/2 lbs. hamburger
1 small onion
1 cup ketchup
1 can pork and beans
3 Tbsp. brown sugar
American cheese slices
2 cans biscuits

Brown and drain hamburger and onion. Add ketchup, pork and beans and brown sugar. Bring to a boil. Pour into a 9x13 inch pan. Top with cheese, covering completely. Top with buscuits. Bake uncovered for 10 to 15 minutes at 400 degrees or until biscuits are brown on top.

Mexican Casserole

This is great for Super Bowl Sunday.

2 cups corn chips
2 - 15 oz. cans chili with beans
1 1/2 cup (6 oz.) grated cheddar cheese

Heat chili with beans. Layer half of corn chips in bottom of a 8 inch round casserole dish. Top with half of canned chili and half of grated cheese. Repeat to form second layer. Bake in 350 degree oven for 20 to 25 minutes, just until cheese is melted. Yield: 6 servings

Pork Chop Casserole

A tasty alternative to frying.

6 to 8 pork chops
2 or 3 large onions
1 cup uncooked rice (do not use minute rice)
3 T. bacon grease
2 or 3 large potatoes
1 1/2 cans green beans
1 can tomatoes
Salt, pepper and paprika to taste

Slice potatoes and onions about 1/4 inch thick. Place potatoes, onions, beans, rice and tomatoes in layers in casserole greased with bacon grease. Add salt, pepper and paprika to each layer to taste. Top with chops. Sprinkle chops with salt and paprika. Cover with foil. Bake 2 hours at 350 degrees. Uncover and bake 30 minutes longer to brown chops.

Here is another pork chop casserole recipe without the potatoes and green beans that uses quick cooking rice.

Pork Chop Bake

4 to 6 pork chops
Onion slices
Green pepper slices
Onion salt
Pepper
Quick cooking rice
Large can whole tomatoes

Place pork chops in shallow casserole or 9 x 13 inch baking pan. Season with onion salt and pepper. On each chop place onion slice, green pepper slice, 2 T. rice and 1 whole canned tomato. Pour remaining tomatoes and juice over all. Cover and bake in 350 degree oven for 1 1/2 hours or until tender. Baste after first hour.

What is Paprika?

Paprika is a mild, sweet red pepper that grows in Spain, Central Europe and the United States. It has a lightly aromatic smell, a brilliant red color and is used for a colorful garnish for pale foods and for seasoning.

Ranch Casserole

Need a little spice in your life?

1 chicken
1 pkg. flour tortillas
1 can cream of chicken soup
1 can cream of mushroom soup
1 large jar of jalapeno Cheez Whiz
1 can Ro-Tel tomatoes
1 medium onion, chopped
Grated cheddar cheese

Cook chicken until done. Cool, then skin and cut into bite sized chunks. Save broth.
In saucepan, combine cream of chicken soup, cream of mushroom soup, Cheez Whiz and Ro-Tel tomatoes. Bring to a boil. Dip enough tortillas in the chicken broth to line the bottom of a 9x13 inch cake pan. On the tortillas, place some of the chicken, onions, and grated cheese. Pour some of the sauce over the top. Repeat layers until all ingredients are used. Bake at 350 degrees for 30 minutes.

Round Steak and Rice Casserole

A complete dinner that is easy to prepare.

1 1/2 lbs. round steak
2 cups celery
1 large onion
1 4 oz. can mushrooms and liquid
1 cup uncooked rice
1 can cream of mushroom soup
1 soup can of water
1/3 cup soy sauce

Brown meat and place in buttered casserole dish. Add celery and onion to frying pan and saute. Add soup, water, mushrooms, rice and soy sauce. Bring to a boil and pour into casserole dish. Cover and cook 1 hour at 350 degrees.

Handy Kitchen Tip

A few drops of lemon juice added to simmering rice will keep the grains separate.

Taco Pie Casserole

A great alternative to messy tacos.

1 lb. ground beef
1 medium onion (chopped)
1 envelope taco seasoning mix
1 pkg. crescent rolls (8 to 10)
1 cup shredded cheddar cheese
2 cups crushed taco chips

Brown ground beef and onion until beef loses its red color. Drain excess fat. Add taco seasoning mix and continue cooking as instructed on the seasoning mix package.
Preheat oven to 350 degrees. Line 8 inch baking dish with rolls, flattening them so that they come part of the way up the sides of the dish. Bake this crust for 5 minutes in the oven.
When the meat mixture is ready, spoon it into the baking dish on top of the baked crust. Mix the taco chips and cheese and cover the meat with this mixture.
Bake at 350 degrees for 30 minutes or until the crust is brown and mixture is bubbly. Yield: 4 to 6 servings

Tamale Casserole

A south of the border treat.

1 1/2 lbs. ground beef
1/2 cup chopped onion
1/2 cup chopped green pepper
1 tsp. seasoned salt
1 pkg. chili seasoning mix
1 (1 lb) can tomatoes
1 can whole kernel corn, drained
1 small can pitted ripe olives, drained
1 cup yellow corn meal
1 tsp. salt
2 1/2 cups cold water
1 cup shredded cheddar cheese

Brown ground beef in skillet until crumbly. Add onion, green pepper, seasoned salt, chili mix and tomatoes; mix. Simmer for 10 minutes. Stir in corn and olives. Spread meat mixture in 2 quart oblong baking dish. Combine corn meal, salt and cold water. Cook and stir until thick, about 15 minutes. Spread corn meal over beef mixture letting some of the beef mixture show through the center if desired. Bake at 350 degrees for 40 minutes. Sprinkle cheese over top and bake for 5 minutes. Yield: 6 to 8 servings

Tator Tot Casserole

Always a family favorite.

1 1/2 lbs. of ground beef
1 medium onion
1 can cheddar cheese soup (undiluted)
1 can green chiles (optional)
1/2 lb. grated cheese
1 pkg. tator tots
salt and pepper to taste

Brown meat and onions, add salt and pepper. Add soup and green chiles and half grated cheese. Top with tator tots and cover with remaining grated cheese. Bake at 375 degrees for about 35 minutes or until cheese and tator tots are done.

Handy Kitchen Tip

You will have no tears when peeling onions if you put them in the freezer for 4 or 5 minutes before peeling.

Texas Casserole

I have been making this casserole for years and it is delicious.

1 medium onion, chopped
1 lb. ground beef
1 (8 oz.) can herb tomato sauce
1 tsp. seasoned salt
2 tsp. sugar
1 (8 oz.) pkg. egg noodles
8 oz. cream cheese, room temperature
4 oz. sour cream
3/4 cup grated cheddar cheese

Brown onions and ground beef. Drain off excess fat. Return meat mixture to skillet. Add tomato sauce, seasoned salt and sugar. Cook at low heat. Cook noodles according to package directions. Using a fork, mash cream cheese and sour cream together. Grease a medium size casserole dish. Layer first with noodles, then meat mixture, then cream cheese mixture. Top casserole with grated cheddar cheese. Bake at 350 degrees for approximately 45 minutes or until heated through. Yield: 4 servings

Note: I always use more cheese than what the recipe calls for simply because my family and I are cheese lovers! Also sometimes I can't find herb tomato sauce and so I just use plain tomato sauce and it tastes just as good. I know you'll love this one. Enjoy!

Tuna Casserole

A simple tuna dish your whole family will love.

1 can cream of mushroom soup
1 can tuna (drained)
1 cup crushed potato chips
1/2 cup milk
1 cup cooked green peas (drained)

Stir mushroom soup and milk together until well blended in casserole dish. Add drained tuna, drained green peas and about 3/4 of the potato chips to the soup mixture and mix well. Sprinkle remaining potato chips over the top. Bake 25 minutes in a 350 degree oven.
