Not everyone has time to cook wholesome dinners every night, but that doesn't mean you have to eat out all the time, or resort to prepackaged meals.
A lot of the casserole recipes I will provide here are quick and simple to make. You can even make these ahead of time and freeze them, simply pop them in the oven before serving.

Pizza Casserole
Gather Your Ingredients:* 2 cups cooked wide egg noodles
* 2 tsp. vegetable oil
* 1 pound soy crumbles, or ground beef
* 1/3 cup chopped onion
* 1 clove garlic, chopped
* 1 tsp oregano
* 1/2 tsp. salt
* 1 can tomato soup
* 1/3 cup water
* 1/2 cup shredded mozzarella cheese
Create Your Meal:
1. Heat oven to 350 degrees.
2. Cook noodles according to directions on package. Drain and set aside.
3. Cook crumbled tofu, or meat, in a bit of oil, with the onion and garlic until brown. Drain off liquid.
4. Stir in spices, soup, water, and noodles.
5. Remove from heat and stir in half of the cheese.
6. Spoon mixture into 11 x 7 baking dish. Sprinkle with remaining cheese.
7. Bake for 30 minutes, or until thoroughly heated.

Vegetable Noodle Casserole
Ingredients:* 1 can cream of mushroom soup
* 1 can cream of broccoli soup
* 1-1/2 cups milk
* 1 cup Parmesan cheese, divided
* 3 cloves garlic, minced
* ¼ tsp. salt
* ½ tsp. pepper
* 16 ounce package of wide egg noodles
* 1 package of frozen broccoli, cauliflower, & carrots, thawed
* 2 cups frozen corn, thawed
Procedure:
1. Preheat oven to 350 degrees.
2. Boil noodles according to package directions. Drain well.
3. Combine noodles with remaining ingredients and 3/4c parmesan cheese.
4. Pour into greased 13x9 baking dish, sprinkle remaining cheese on top.
5. Bake for 45-50 mins.
TIP: **This is really yummy with cornbread or cornbread muffins.**
Mexican Casserole
Ingredients:* 1/2 lb ground beef or turkey or soy crumbles
* 1 cup dry rice (2 cups cooked)
* 1 can pinto beans, drained (or kidney or black)
* 2 cups frozen corn, defrosted
* 1/2 package taco seasoning
* 1/2 cup cheddar cheese, grated
Directions:
1. Preheat oven to 350 degrees.
2. Cook rice according to package directions.
3. Brown beef or turkey, drain fat. Or brown tofu crumbles.
4. Mix beef, rice, beans, corn, and taco seasoning into bowl, mix well.
5. Stir half of cheese into mixture.
6. Pour into casserole dish, sprinkle remaining cheese on.
7. Bake for 20 minutes.
Hungarian Noodle Casserole
Ingredients:* 3 buillon cubes, chicken or vegetable
* 1/4c boiling water
* 1 can cream of mushroom soup
* 1/2 cup chopped onion
* 2 tbs. worchestershire
* 1/2 tsp. garlic granules
* 1/4 tsp. hot pepper sauce
* 2 cups (16oz) cottage cheese
* 2 cups sour cream or plain yogurt (or mixture of both)
* 1 - 16oz package extra-wide noodles
* 1/4 cup shredded parmesan
Directions:
1. Preheat oven to 350 degrees.
2. Cook noodles, drain, & set aside.
3. Dissolve buillon cubes in hot water.
4. Add the next 6 ingredients and mix well.
5. Stir in cottage cheese, sour cream/yogurt, & noodles. Mix well.
6. Pour into a greased 2-1/2 quart pan, sprinkle parmesan on top
7. Cover and bake for 45 minutes.
