Cayenne Pepper : more than a 'hot' spice ... perhaps the most useful and valuable herb!
Cayenne is a medicinal and nutritional herb. It is a very high source of Vitamins A and C, has the complete B complexes, and is very rich in organic calcium and potassium, which is one of the reasons it is good for the heart.
Many herbalists believe that Cayenne is the most useful and valuable herb in the herb kingdom, not only for the entire digestive system, but also for the heart and circulatory system. It acts as a catalyst and increases the effectiveness of other herbs when used with them.
To know me is to know that I'm of Hungarian descent, love making Stuffed Cabbage, and have used another red spice, Paprika for many years. Not till I discovered Cayenne Pepper did I like a red spice better than Paprika. Now you could say that Cayenne Pepper is a staple in our house ~ and it's also good for us! The cayenne, or Guinea pepper or bird pepperhttp://www.complete-herbal.com/culpepper/guineapepper.htm is a hot, red chili pepper used to flavor dishes and for medicinal purposes. Named for the city of Cayenne in French Guiana, it is a cultivar of Capsicum annuum related to bell peppers, jalapeños, and others. The Capsicum genus is in the nightshade family (Solanaceae).
The fruits are generally dried and ground, or pulped and baked into cakes, which are then ground and sifted to make the powdered spice known as cayenne pepper.
Cayenne is used in cooking spicy dishes, as a powder or in its whole form (such as in Sichuan cuisine) or in a thin, vinegar-based sauce. It is generally rated at 30,000 to 50,000 Scoville Units. It is also used as a herbal supplement, and was mentioned by Nicholas Culpeper in his book Complete Herbal.

Cayenne Pepper in Hungarian Goulash!

Hungarian Goulash Recipe #267266 by SweetsLady.
2 lbs beef, cut into 1-inch pieces
4 tablespoons oil
1 cup onions, chopped
1 garlic clove, minced
3/4 cup ketchup
6 tablespoons worcestershire sauce
1 teaspoon vinegar
1 tablespoon paprika
1 teaspoon salt
1 teaspoon dry mustard
1 dash cayenne
2 bay leaves
3 cups boiling water
1/4 cup cold water
2 tablespoons flour
1 lb rigatoni pasta
Brown 2 lb. beef cut in 1" pieces in 4 T. oil.
Add and brown lightly onion and garlic.
Add ketchup, worchestershire, vinegar, paprika, salt, dry mustard, cayenne, and bay leaves.
Add boiling water; cover and simmer 2 to 2-1/2 hours. Remove bay leaves.
Thicken with 2 T. flour in 1/4 cup cold water.
Cook rigatoni according to box directions, drain, and add to stew.
This will be soupy when first made, but the pasta will absorb this by the following day.
P.S. Like it spicier? Add more Cayenne Pepper!

Wow! Great info. I have never used it for medicinal purposes, but then I never knew about them. As a huge fan of cajun and creole cooking, cayenne is a major ingredient which I use often. It just wouldn't be the same without it.
