To know me is to know that I'm of Hungarian descent, love making Stuffed Cabbage, and have used another red spice, Paprika for many years. Not till I discovered Cayenne Pepper did I like a red spice better than Paprika. Now you could say that Cayenne Pepper is a staple in our house ~ and it's also good for us! Try it, you'll like it too!

Spanish explorers looking for black pepper misnamed them as pepper, and introduced them to the rest of the world. One of Columbus' passengers, de Cuneo, wrote how the Native Americans ate pepperlike fruit "like we eat apples."
- Try adding Cayenne Pepper to salsa, avocado dip, taco, and enchilada sauces for extra zesty flavor. You can heat up a barbecue sauce or meat marinade with a shake of Cayenne Pepper. Spice up your tartar sauce or vegetable dips and dressings with a pinch of Cayenne Pepper. You can make South of the Border omelets with tomatoes, onions, peppers, and a pinch of Cayenne Pepper added to the eggs.
Cayenne Pepper Spice

For the best Cayenne Pepper, choose a premium quality of the spice.
It makes any dish hot and spicy, but also enhances the flavor. I love to use it in my spicy potato salad and on basa, a Vietnamese catfish.
Store in a sealed container in a cool, dry place.
Cayenne Pepper in Hungarian Goulash!

2 lbs beef, cut into 1-inch pieces
4 tablespoons oil
1 cup onions, chopped
1 garlic clove, minced
3/4 cup ketchup
6 tablespoons worcestershire sauce
1 teaspoon vinegar
1 tablespoon paprika
1 teaspoon salt
1 teaspoon dry mustard
1 dash cayenne
2 bay leaves
3 cups boiling water
1/4 cup cold water
2 tablespoons flour
1 lb rigatoni pasta
Brown 2 lb. beef cut in 1" pieces in 4 T. oil.
Add and brown lightly onion and garlic.
Add ketchup, worchestershire, vinegar, paprika, salt, dry mustard, cayenne, and bay leaves.
Add boiling water; cover and simmer 2 to 2-1/2 hours. Remove bay leaves.
Thicken with 2 T. flour in 1/4 cup cold water.
Cook rigatoni according to box directions, drain, and add to stew.
This will be soupy when first made, but the pasta will absorb this by the following day.
P.S. Like it spicier? Add more Cayenne Pepper!

- Recognized it in the HOT shrimp cup of ramen noodles soup as the main fire and have been in love ever since! Use it in soups, stews, over left over mashed potatoes & cheese - anywhere you might us black pepper! - in fact I love it more than black pepper now - different kind of heat. cayenne hits the back of the throat with a nice warmth but doesn't burn or linger too long - rather mellow - whereas crushed black pepper cooked in food ie chili can really make it burning hot. - My opinion anyway. Love to hear more ideas for using!
