My Recipe For Celery Soup
This delicious celery soup recipe is easy to make, full of natural flavour and filling too! Add a splash of cream for that extra touch of luxury or have it just as it is for a healthier celery soup which is lower in calories.
When I first started making celery soup I couldn't have had an easier recipe. I simply added more chopped celery along with some stock, or milk, to a tin of condensed Celery Soup.
But, that was in the days when I didn't really cook and now, the condensed celery soup seems to have disappeared from my supermarket's shelves.
These days, my recipe for celery soup is still easy, just as tasty, and even healthier because I use all fresh ingredients

1 tbs olive oil
1 finely chopped onion
1 sprig fresh thyme
600ml vegetable stock
300ml semi skimmed milk

When Making Celery Soup Some People Prefer To String Their Celery
To String or not to string?
Some people think that when cooking with celery it is much better if it is stringed first.
Stringing the celery is easily done with a vegetable peeler if that is what you prefer, personally I don't bother stringing my celery though.
Would you string your celery before making the celery soup?

This would be a "qualified" No. It really depends on how mature (?) the celery is--if the strings are thin, I don't string it if I'm using thicker slices. If the celery has thick, tough, nasty strings...those suckers get ripped off in a heartbeat.

Instructions For Making The Celery Soup
Just follow these simple instructions to make a wonderful, healthy, celery soup

Put the oil and around 3tbs water into a large saucepan, heat then ad the celery and onion. Stir together and heat on high until sizzling. Reduce the heat and cook, covered, for around 10 minutes until the celery and onions have softened.

Add the thyme and stock, season with sea salt and freshly ground pepper then bring back to the boil and simmer (partially covered) for 15 minutes.

Either use a stick blender or a blender to blend the soup until smooth.

Stir in the milk and simmer for another 5 minutes.

Check the seasoning and serve sprinkled with the chopped parsley.

Tips To Vary The Celery Soup Recipes
Try some of the following to vary the celery soup recipe:

1Cream Of Celery Soup:
Add a dash of cream or creme fraiche to the soup to make a lovely, creamy celery soup. -
2Carrot And Celery Soup
Add one or two finely chopped carrots to the ingredients and cook the soup as usual adding a little more stock if needed. -
3Leek And Celery Soup
Substitute the onion for a finely chopped leek. -
4Stilton And Celery Soup
Simply crumble in a generous piece of stilton towards the end of cooking and stir until the cheese has melted into the soup. -
5Potato And Celery Soup
Add a diced potatoe to the ingredients as cook as normal, add a little extra stock if needed. -
6Spicy Celery Soup
The addition of a few chilli flakes will give the celery soup a nice, warming kick.
