Celery Soup Mystery Recipe

Not Just Any Celery Soup Recipe

We were even afraid to put the other main ingredient in the title because we didn't want to give away the secret to this soup's success. In other words, this isn't your usual cream of celery soup, although it is creamy and celery based. Nothing unusual in it either. The answer isn't that simple, although the soup is simple to make and simply delicious!

The difference is that this is not only a delicious and nutritious dish, but it also usually becomes one of the main topics of a conversation long enough to last from the soup course through dessert (and then some) as your guests try to guess just what kind of soup you've made.

We have seen barbeque/meat-and-potatoes guys as well as vegans ask for seconds, but most never figure out the mystery. In fact, around our house, this is affectionately called "Mystery" soup. Before you read any further, you must promise to not tell anyone what you are serving and watch them try to guess.

they cannot find any clues. If that means taking the garbage out or
running the disposal before guests arrive or someone else gets
home to do it, so help me, I will do it myself!

Ingredients

For Six Servings

vegetable soup ingredients1 lb. Fresh head celery, w/leaves, cleaned and cut into 1 inch pieces. Yes. The leaves also.
2 medium size sweet onions, peeled & quartered (I like Vidalias, but others work as well)
1 Large clove garlic, peeled
1 SECRET INGREDIENT (if you signed the above oath, you may click here to find out what it is.)
6 Tablespoons sweet butter
4 cups broth (I use chicken, unless making this for vegans, in which case I'll use veggie broth)
Salt and (freshly ground) White Pepper to taste

Shopping List

1 lg head of celery (1 lb.)
1 Garlic Bulb
2 Sweet Onions
Sweet Butter
1 Qt (32 oz.) Chicken or Vegetable Broth (if you have neither the time, energy, or inclination to make it yourself)
Salt & Pepper (Freshly Ground white pepper preferred)
ONE SECRET INGREDIENT

What else you'll need

2 Saucepans
Strainer
Blender or Food Processor

Cutting Board
Knives for peeling and chopping
Spoons for stirring (and sampling)

Now What?

Six Simple Steps

garlic for celery soup1. Finely chop the garlic
2. Melt the butter in a large saucepan.
3. Add the chopped garlic, cut up celery, quartered onion and SECRET INGREDIENT to the saucepan.

4. Cook for 30 minutes, stirring frequently and making sure they do not brown.
5. Add 3 to 3.5 cups of broth and reserve the rest for later.
6. Cover and cook for another 45 minutes.

Okay. I did that.

celery soup saucepanStrain the broth into another saucepan. Puree the contents of the strainer and add them to the broth, stirring until thoroughly blended. Season to taste with salt and pepper. If the soup is too thick, add more of the broth. Ladle into bowls, garnish with a sprig of parsley and serve.

Options: Try a dollop of plain Greek yogurt and small mint leaf or a sprinkle of chopped chives as a garnish.

    Yay for the secret ingredient! I can imagine how that would work great in the blend. I'm in need of some good soup recipes and will need to try this one. Plus it doesn't have a huge long off-putting list of ingredients so extra points for that, and of course for making me smile!
