Livin' La Vida Sans Gluten

Gluten Intolerance is coming to be recognized as one of the most common, and under-diagnosed ailments out there. It is estimated that nearly 1 in 7 people have some form of gluten intolerance. (Including yours truly) These intolerances range from mild irritation, which can sometimes be handled with digestive enzymes, to (gasp) Celiac disease, which requires complete abstinence from the stuff.

Living a gluten free life is Hard! Sometimes it seems like gluten is a predator, lurking in the shadows, waiting for the opportunity to strike. This page is dedicated to helping you become the hunter, not the hunted.

So what is one to do? If you're not sure if you are gluten intolerant, see the links below to find the symptoms. If you are gluten intolerant and need a little more info, see the links below. What Is Gluten? 

Gluten is a complex protein found in wheat, rye and barley. It is the substance responsible for making cakes light and fluffy and breads soft and chewy.

This is the reason that gluten free foods tend to be a bit dense and dry. This is also the reason the people with Celiac and other gluten intolerances have to check the ingredients label of every food they pick up.

Gluten's soft and moist properties make it a favorite food additive for manufacturers. They change it a little as they go along, and change the name as well. Overall, gluten is a great food additive. It is inexpensive, natural and safe to consume...

Unless, of course, you are one of the 3 million people in the world that cannot safely consume gluten. If you are, you should arm yourself with a portable version of The Don't List and be ready to examine the names of ingredients carefully.

Examination of Cross Contamination 

Common Sources of Cross Contamination and How to Avoid Them

According to Webster, contamination is:
1 a: to soil, stain, corrupt, or infect by contact or association b: to make inferior or impure by admixture 2: to make unfit for use by the introduction of unwholesome or undesirable elements

Cross contamination happens often in food and can be very hazardous to people with gluten sensitivities. There are ways to keep yourself healthy at home without being completely paranoid. Want to know more? Read the list!

For the remainder of this list, foods containing gluten will be referred to as unhappy foods. Conversely, gluten free foods will be referred to as happy foods.
  • Surface to food- This happens when unhappy foods are placed on a surface, such as a counter, and happy foods are placed on that same surface. Gluten particles attach to the food and make it unhappy.

    Avoidance- Keep cleaning wipes on hand to de-contaminate any surface after using. This seems like a lot, but it becomes second nature quickly.
    Or, make it a rule in your house that no food is prepared on a bare counter top. Instead, use a paper towel or plate.
  • Food Sharing- Things like peanut butter, mayonnaise and butter are the prime culprits here. A knife that is used to spread anything on bread and then dipped back into the container for more will contaminate the entire container.

    Avoidance- Either make a house rule that all items should be spooned onto unhappy foods and spread with a separate utensil, or keep separate containers for happy and unhappy eating. If you go the separate container route, make sure the containers are clearly marked.
  • Flying Flour- Anyone who has ever baked knows that flour particles can float high and far. These particles can settle on happy foods and make them unhappy.

    Avoidance- Clean surfaces often. Make sure that containers of happy food are sealed up tight.
  • Lotion, Shampoo, Bodywash, Laundry Detergent and Make-up- Okay, maybe this doesn't qualify as CROSS contamination, but it can be a danger. Anything you put on your skin can be absorbed through the skin.

    Avoidance- Treat these products the same way you treat your food and read the ingredients before you buy.
  • Eating Out- When eating out, many foods are prepared in the same area and cross contamination is very possible.

    Avoidance- Short of going to the kitchen and preparing the food yourself, there is not much you can do. The good news is, employees of food establishments are trained in how to avoid cross contamination of all kinds. Speak to a manager and explain your needs. Most often, they are more than willing to do what is necessary to keep you healthy.
  • Dirty Hands- This is the most common source of cross contamination.

    Avoidance- Wash your hands!
