White Wines - White, pink, and oh so sparkling !

White Dinner Wines Fermenting the juice for white wines alone—without skins and seeds —makes it possible to complete the process in a single container, usually a covered tank or fermenting cask.
The delicate flavor and critical appearance factors of white dinner wines make their fermentation especially exacting. Fresh juice is allowed to settle several hours after crushing, to separate it from sediment.
Rosé wines are allowed to ferment with the skins and pulp for a short time to obtain their light color and mild astringency. After no more than 36 hours — usually nearer 18 hours— the juice is pumped off and continues fermentation alone.
Sparkling Wines,Champagne, and other sparkling wines are the result of two fermentations. The first is similar to that for still dinner wines. The "must" usually is allowed to ferment to completion,Champagne in the same way as other white wines and Sparkling Burgundy the same as still reds. Much white Champagne, incidentally, is produced from the juice of red and black grapes.
To do this, the wine maker draws the juice from the color-making skins just after crushing.Careful control of the initial fermentation is necessary, to ensure proper conditions for the subsequent blending—called cuvee (coovay) in Champagne making—and the second fermentation.
