Today's Special... Broccoli!!

So many different ways to cook broccoli. This restaurant I go to on the Hill in St. Louis, Mo. certainly has found thousands of ways to cook it. That restaurant is Mama Campisi's at Edwards and Bischoff. If you ever get down to my neck of the woods, make sure you stop by and have some broccoli.

Before we get to the recipe, how about a little broccoli joke.

A giant piece of broccoli and three carrots are trapped inside a double boiler. "Oh, no," says the broccoli, "The stove is lit!"

A tough carrot says, "Don't worry. Us carrots will escape from this here double boiler and then come back and save you broccoli later."

So the broccoli agrees and the carrots huddle up and launch themselves out of the pot. The carrots celebrate by having a beer. Three beers later, A carrot accidentally lights the broccoli's dog on fire. The tough carrot goes, "Oh, no, we forgot about the broccoli!"

So, the carrots put down their beer and run back to the double boiler and open the lid. "Broccoli, we are so sorry that we forgot you. Also, we accidentally lit your dog on fire. You must be angry."

"Angry?!' replies the broccoli. "I'm steamed!"

Cheddar Cheese Sauce

Makes apprx. 2 cups

Use this cheese sauce on vegetables, pasta, or use in other dishes. Since today's theme is broccoli, then check out the end of this recipe. It's so simple I can do it. :) Let's do it!

3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon ground black or white pepper
1 1/2 cups milk
1 cup grated sharp Cheddar or smoky flavor Cheddar cheese

Melt butter; remove from heat. Stir in flour and seasonings.

Gradually add milk, stirring until well mixed.

Cook over low heat, stirring constantly, until thickened and smooth.

Cook for 5 minutes longer; add cheese.

Stir until smooth and well blended. Serve with pasta or vegetables.

Broccoli with Cheddar Cheese Sauce

Blanch your broccoli and strain. Drizzle this cheddar cheese sauce over the broccoli and folks will go crazy. Especially the kids!

    Broccoli in stir fry is the way we normally eat it but now I'm going to try it with cheese sauce instead of sesame sauce. Seriously - I'm hungry now!

Favorite Broccoli Recipe from Judy

This recipe for Broccoli Casserole come from Judy. Thanks for sharing!!

Broccoli Supreme

2 pkgs. (10 oz.) chopped broccoli, cooked & drained. (I use fresh most of the time...and what ever amount. One bunch or two).
1 Cup MAYONNAISE (Hellman's)
2 eggs, well beaten
1 can cream mushroom soup
1 med. onion, chopped
1 Cup grated cheddar cheese
1 1/2 cups herb seasoned stuffing crumbs
1/4 Cup butter

Cook broccoli, drain well.combine soup, mayo, eggs, onion. blend into broccoli.

Pour into 9 x 13 pan...actually probably smaller or anything you want to.
Put cheese over that.

In a small pan....melt butter and add bread crumbs till moistened. (you might need just a smidgen more butter to moisten all.) I just kind of do what I want.

Sprinkle over cheese and bake 350 degree oven for 30 - 45 minutes...until bubbling and done.
