Quiche for Thanksgiving Day Breakfast
Would you like to simplify things in the kitchen on Thanksgiving Day? Why not make breakfast the day before while you are making your pies? Cheese Salsa Crustless Quiche is very simple and can be cut, heated in the microwave and served on Thanksgiving Day morning.
Cheese Salsa Crustless Quiche is low carb, easy, and it looks nice. It will save you lots of time on the morning of the cooking marathon known as Thanksgiving Day. Everyone can get their own slice when they get up or you can sit down to a family breakfast together. Either way you can make some toast, pour some orange juice, get some coffee going and you have a nice healthy breakfast with no fussing.
I only have one oven and the turkey is in there on Thanksgiving Day so I do as much as possible the day before, including Cheese Salsa Crustless Quiche!

Cheese Salsa Crustless Quiche
A nice low carb breakfast
CHEESE SALSA CRUSTLESS QUICHE
1 cup shredded jack cheese
1 cup shredded cheddar cheese
1/2 cup Pace picante sauce (or your favorite salsa)
1 cup heavy cream (or half & half or whole milk)
3 eggs
Preheat oven to 375. Spray a 9" pie pan with cooking spray. Layer in jack cheese, half the salsa, cheddar cheese, then remaining salsa in the pie pan.
Combine eggs and cream. Beat until frothy and pour over the cheese and salsa . Bake for about 45 minutes.

- Serves: 6
Ingredients
- 1 cup shredded Jack cheese
- 1 cup shredded Cheddar cheese
- 1/2 cup plain yogurt
- 3/4 - 1 cup heavy cream (or half and half or whole milk)
- 1/2 - 1 cup of leftover broccoli
- 3 eggs
Instructions
Preheat oven to 375. Spray a 9" pie pan with cooking spray. Layer in jack cheese, half the yogurt, cheddar cheese, then remaining yogurt in the pie pan. Add the broccoli.
Combine eggs and cream. Beat until frothy and pour over the cheese and salsa . Bake for about 45 minutes.

A Low Carb Breakfast
These nutrition facts assume six servings. Quiche has good fats and protein from the eggs and dairy products and very few carbohydrates. There are only 217 calories per serving which means there is room to add whole grain toast and fruit or fruit juice for a very nice breakfast.Of course this quiche is a great breakfast at any time of the year. It is versatile enough to serve as lunch or dinner too.
This quiche recipe is very adaptable and forgiving too. You can substitute any cheese that you have. If you don't like piquante sauce, use white sauce or something else. Vegetables are a nice addition if you have them leftover. Quiche is economical as well as delicious!
