There are hundreds of types of cheese made from the milk of many different animals from all parts of the world. Different cheese types can be categorized by the type of milk used to make them, the cheese aging process, the cheese's country of origin, etc. A cheese such as cheddar cheese can be made using identical methods but using different milks to achieve wonderful and unique cheese varieties.

Many Italian cheeses are in common use in American kitchens. One of the best known Italian cheeses is mozzarella cheese. Mozzarella is a semi-soft cheese that is generally eaten fresh, not aged. Buffalo mozzarella is made from the milk of water buffaloes.

Another well known Italian cheese is Parmigiano-Reggiano or Parmesan cheese. Parmigiano-Reggiano cheese is made from raw cow's milk, and is cooked using a thermophilic culture and rennet. It is brined for about 3 -4 weeks, and is aged for at least 1 year.

Mascarpone cheese is made from cream that has been curdled with acid, usually citric or ascetic acid. It can even be made using lemon juice. Mascarpone is neither pressed nor aged. Its soft texture and high fat content make it a good cheese for desserts, and it is a key ingredient in tiramisu.

Provolone is a semi-hard cheese from whole cow's milk, usually aged for a minimum of 4 months.

Ricotta cheese is made from the whey left over from the production of other cheeses, and can be produced from cow, goat, or buffalo whey.

The largest producer of goat cheeses is France, although other countries around the world also have regional cheese made from goat's milk. Soft goat cheeses are easily flavored with herbs or finished with ash, The most well known goat cheese is feta, a Greek cheese made from goat and sheep's milk.

"Morbier is an aromatic and surprisingly mild French cow's milk AOC cheese defined by the dark vein of vegetable ash streaking through it middle. Today, the ash is purely decorative, a nod to the method by which Morbier was once produced in Franche-Comt?. Traditionally, the evening's fresh curds were sprinkled with ash to prevent the formation of a rind overnight. The next morning, new curds were laid upon the thin layer of ash to finish off the wheel. The wheel was then washed and rubbed by hand, forming a rind to protect the rich, creamy interior and to create a delectably stinky aroma. Morbier, which is aged for at least 60 days, pleasantly confounds expectations. Contrary to its smell, Morbier has a mild taste and leaves a wonderful, nutty aftertaste. Morbier is excellent served with Gew?rztraminer or Pinor Noir."

"Azeitao is a concentrated round of sheep's milk cheese that is coagulated with cardoon thistle instead of traditional animal rennet. Azeitao is named for the village where it was born in the foothills of the Arribida mountain range in Portugal. The pastures where the sheep of Azeitao graze are lush and covered in herbaceous scrub, giving the milk its characteristically rich flavor. Molded in cloth, Azeit?o has a rustic appearance that adds to its romance. Its texture ranges from soft and unctuous to firm and chewy; you can cut open the top and scoop its yellow cream onto slabs of nutty bread. "Abbaye de Bel'loc is still made in the traditional manner by Benedictine Monks at the abbey of Notre-Dame de Belloc. A French Pyrenees sheep's milk cheese, Abbaye has a fine, dense texture and is high in fat. The milk comes from the red-nosed Manech ewes (an old local breed) whose milk is brought into the monastery from neighboring farms. Abbaye de Belloc has a true Basque character, and it is believed that many centuries ago the monks from the Belloc Monastery first taught the Basque shepherds how to make cheese. Proper care in the right maturing conditions will accentuate the rich, caramelized flavors that make this cheese so addictive."

"Fleur du Maquis is made in Corsica from the milk of the Lacaune ewes. Its name means ""Flower of the Maquis,"" the maquis being the local term for the typical thickets of rough underbrush where highway robbers and guerrilla fighters used to hang out. This cheese is quite similar to Brin d'Amour, meaning ""a breath of love."" During production, the smallish wheels are encrusted with rosemary, fennel seeds, juniper berries, and the occasional bird's eye chile.
