Cheesy Cauliflower Soup is perfect on a cold night

What could be better than a bowl of this hot, creamy soup and with a piece of homemade bread to keep the chill out?

This is an old favorite at our house.  Cheesy cauliflower soup is a filling soup sufficient to eat as a main course, or in smaller portions and used as an appetizer.

Easy Cheesy Cauliflower Soup

Ingredients

1 tablespoon butter
1 small onion, chopped
6 cups mashed potatoes
1/2 cup milk + 2 soup cans full of milk (approximately)
1 lb. Velveeta cheese, cubed
1 head cauliflower
1 bunch Broccoli (optional)
2 cans cream of celery soup
Salt & Pepper to taste

Easy Cheesy Cauliflower Soup Directions

Directions

1. Steam cauliflower and broccoli until tender. Cut into small pieces, and put aside.

2. In a soup pot melt butter over low heat, and saute onions until tender. Stir in the mashed potatoes, and milk. Add the 2 cans of soup and 2 (soup) cans of milk with the velveeta cheese. Add the cauliflower and broccoli.

3. Cook for 20 to 30 minutes until heated through and cheese is melted. Season with salt and pepper to taste.

4. Serve and enjoy!

Note: Use more or less milk to achieve desired creaminess.

Cheesy Cauliflower Soup




 1 (10 oz) pkg frozen cauliflower, thawed
 1/2 c Onion, finely chopped
 1 c Cheddar Cheese, shredded


 1.5 c Milk
 1 can Cream of Mushroom Soup
 1 can Cream of Chicken Soup





  Combine cheese, milk, and soup in crockpot, cook over high heat.
  Meanwhile, cook the cauliflower, and chop finely, along with the onion.
  Add broccoli, cauliflower, and onion to crock pot.
  Cook for at least 3 hours on high heat. Stir and serve.

 Makes approx. 6 half-cup servings.

 Cauliflower Cheese Soup




 1 pkg. (16 oz.) frozen cauliflower
 1 can cream of celery soup
 2 cans chicken broth
 3/4 lb. (12 oz.) Velveeta Cheese, cut up


 
 
 
 





  Place cauliflower and broth in large saucepan; cover.
  Bring to boil on medium-high heat.
  Reduce heat to low; simmer 10 min. or until cauliflower is tender.
  Mash cauliflower with potato masher to desired consistency.
  Stir in Velveeta and cream of celery soup.
  Cook 5 min. or until Velveeta is melted and soup is heated through, stirring frequently.
