Chef Rolf Zahnd

Rolf Zahnd is a talented Swiss chef who has established himself and his family in Nokomis, Florida. My family has had the pleasure of eating often in his Saltwater Cafe. My personal favorite meal was on Mother's Day 2008.

Three reasons to love Chef Rolf 

1. Chef Rolf has developed a successful restaurant. This is not an easy thing to do. The competition for restaurants is intense.

2. Chef Rolf has developed a successful TV show.

Here is a look at the inside of Chef Rolf's Saltwater Cafe, 1071 Tamiami Trail N, Nokomis, FL, 34275, 941-488-3775 (P), 941-488-0991. This family owned restaurant is located in a strip mall on Rte 41 and open for lunch and dinner. There are even extra non-food features to provide a more enriched experience. Live entertainment is available on weekends and the cafe is a free Wi-Fi spot. The cafe's own website is www.saltwatercafe.com/ .

The Saltwater Cafe menus are printed on the website above. Selections include everything from meatloaf to seafood, steak, all kinds of meat and vegetable specialties, desserts, an extensive wine list and more.

Aquarium fish tanks at Saltwater Cafe 

The pleasant decor at Chef Rolf's Saltwater Cafe includes a wall of saltwater fish tanks that separates the diningroom from the more casual dining and bar area. I made this video of the fish tank at my table on a recent visit.

Chef Rolf's New Florida Kitchen Style Swordfish 

New Florida Kitchen Style Swordfish (recipe is from Saltwater Cafe website)
Ingredients:
2 x 6 oz. Swordfish Steak
4 oz. White Lump Crab Meat crumbled
4 oz. Alligator Sausage sliced
1 Bell Pepper diced
2 Garlic Cloves chopped
2 Spanish Onion diced
1 Scallion diced
2 oz. Butter

Preparation:
Sautee all ingredients other than swordfish in half the butter for about 3 minutes over medium heat. Use blackening seasoning to taste.
In separate pan sautee fish in other half of butter for about 3 minutes each side over medium heat. Use fresh fish seasoning to taste.
Plate fish, top with crab and sausage mixture and top with bearnaise sauce and garnish with fresh steamed asparagus.
