The Chef Uniform - A history of necessity

Chefs are immediately recognizable by their uniforms: the checkered pants, the chef jacket, and the toque. Although the uniform is a distinguishing characteristic of food service employees, it is more than a mere uniform. It is the result of a history of necessity.

The Chef Jacket

The chef jacket, is made from a double layer of cotton which is designed to insulate the body from the heat of the stove. It also serves as protection against accidental splashes or splatterings of hot liquid. The buttons are typically knotted cloth, in order to withstand the frequent washings and continuous contact (bumping and rubbing) with the pots and pans. The overall style of the chef jacket is double-breasted. This allows the chef to reverse the jacket in order to cover the occassional stain. No customer wants to compliment a chef who looks like he's wearing their entree.

Removing Tomato Sauce Stains

(works for Ketchup also)

Now that you have your chef apron, it's picking up all the stains that would have landed on your clothes. Keep your apron clean of tomato sauce and ketchup stains by following these few simple steps:

(1) Remove as much of the excess sauce as soon as possible
(2) Run cold water through the stain from the opposite side of the fabric to force the stain back through
(3) Apply a solvent (detergent stick, spray or liquid) and rub gently
(4) Use an eye dropper to apply diluted vinegar to bleach out color from white and colorfast fabrics
(5) Repeat steps (3) & (4) until stain disappears
(6) Reapply stain stick, gel, or spray and let stand for 5 minutes
(7) Finish stain removal with a regular wash cycle

Also great for getting tomato stains out of your clothes.

The Chef Hat (Toque)

The toque, the traditional chef's hat, has been worn by chefs as far back as the 16th century. It is thought that the toque originated when chefs hid among Orthodox priests (to avoid persecution) and wore the same clothes to better disguise themselves, including their tall hats. Regardless of their origin, in the mid 1800's chef Marie-Antoine Carême thought that the hats should be different sizes, to distinguish the cooks (who now wore shrter hats/caps) from the chefs (who wore the taller toques). Even later, the folded pleats were added, which are meant to symbolize the more than 100 ways in which a chef can cook an egg.
