Cherry Chip Cupcake Recipe

How to prepare Cherry Cupcake Recipe
- Serves: 12
- Prep Time: 5
- Total Time: 20 min
2 cups all-purpose flour
1 teaspoon ground cinnamon
3/4 cup white sugar
1/8 teaspoon salt
3/4 cup vegetable oil
2 eggs
2 teaspoons vanilla extract
1 teaspoon baking soda
1 (21 ounce) can cherry pie filling
6 ounces semisweet chocolate chips
Instructions
1. Preheat the oven to 350 degrees F.
2. In a bowl, mix together the flour, sugar, oil, eggs, vanilla, baking soda, cinnamon and salt.
3. Stir in the cherries and their liquid and the chocolate chips.
4. Pour the batter into the prepared baking cups in the muffin pan.
5. Bake for 10-15 min, until brown around the edges and tooth pick comes out clean.
Note: If using two muffin tins, bake one at a time on center rack.

3 oz. cream cheese
2 cup confectioners sugar
1/2 stick butter
1/2 jar Maraschino Cherries
1 tsp. Vanilla Flavor
Instructions
1. Cream together cheese, sugar and butter.
2. Add remaining ingredients and mix well.
3. Spread over cherry cupcakes.
