Bake Cherry Bar Cookie | Snack for Lunches and Picnics
This simple dessert features dried cherries, nuts, oatmeal and wheat germ. Make them when you want something more substantial to satisfy your sweet tooth.
Cherries are a super fruit, because they are rich in antioxidants. I'd like them anyway, because I enjoy their sweet-tart interplay of flavor.
These bar cookies make a not-too-sweet quick treat for the kids and the family. Take them in the car on trips, too.

Cherry Bars Recipe
Cherries Are a Super Fruit
- Serves: 12
- Prep Time: 10 minutes
- Total Time: 45 minutes
Did you know that Michigan grows 75 percent of the tart cherries in the US?
Dried cherries are widely available in the produce section of supermarkets, and online, making it easy to enjoy the red super fruit all year long.
I've adapted my version from a recipe by Ellie Krieger, published on the Cherry Marketing Institute website.
Ingredients
- 1 c. quick cooking oatmeal
- ¾ c. flour
- ¼ c. wheat germ
- 1 t. cinnamon
- ¼ t. salt
- ½ c. honey
- 1/3 c. unsweetened applesauce
- 2 large eggs (beaten)
- ¾ c. dried cherries (chopped)
- ½ c. nuts (chopped)
- ¼ c. fruit only apricot preserves
Instructions
Preheat oven to 350 degrees. Spray a 9x9 baking dish with cooking spray for baking. Set aside.
Mix together the oatmeal, flour, wheat germ, cinnamon and salt. In a separate bowl, mix applesauce, honey and eggs. Mix well, then add cherries and nuts.
Fold wet ingredients into dry ingredients. Pour batter into the baking dish. Bake for about 30-35 minutes, until toothpick comes out clean from the center of the bars.
Near the end of the baking time, heat preserves in a heavy saucepan, until bubbly. Spread onto bars as soon as they come out of the oven. Cut when cool, into small bars about 2 inches by 4 inches. Makes 12 bars. Cover and refrigerate any leftover bars.

If you don't have time to make a bar cookie, just have some spreadable fruit on good bread or muffins, along with your tea or coffee. That will hit the spot!

- I think you could use fresh cherries. I'm thinking they would need to be cut up and well drained. The cookie section is pretty stiff, so it could take being a bit looser. Or, the cherries could go into the topping.

- Yes, they were giving them away down here for commodities and my MIL couldn't keep up with eating them so we got some bags. We used them in all kinds of baking.
