Cherry pie day is February 20th. I personally do not need an excuse to eat pie. Pie is good for any day. But, if a day says that I should eat cherry pie, I will make sure to eat some pie.

Recipe for pie crust
- Serves: 2 - 9 inch pie crusts
Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 cup shortening
- 1/2 cup butter
- 1/2 teaspoon salt (if using unsalted butter)
- 1/2 cup ice water
Instructions
- In a bowl, combine flour and salt.
- Cut in shortening and butter until it looks like course crumbs
- Add water slowly, 1 tablespoon at a time until the dough can form a ball.
- Divide dough in half.
- If the dough is cold enough, you can roll out each half for the top and bottom crust of the pie. If it isn't, chill in the refrigerator for at least four hours before rolling out.
Now you will have two crusts ready to be used for your pie. You can make this as much as two days ahead. Refrigerate until use.
Crust, from a mix
If you don't trust yourself to make crust from scratch, this is a nice compromise. Just add water, mix, roll, bake and you will have a tasty and flaky crust.
How to make a lattice pie crust
One of my favorite part about cherry pie is the top crust. Most cherry pies that I have gotten at a restaurant have this weaved lattice look to it. It seems to be quite complicated. But, it isn't that hard. This video explains 2 methods for the crust. First is the regular weaving method. The next is a cheating method -- take the strips of dough and just lay them on top of each other - skip the weaving.
Note: Just because they used store bought dough doesn't mean that you have to. Just roll out and chill your dough before trying this method.

Shiny Crust
If you want a nice shiny crust, an egg wash is a great method. Take one egg and combine it with one tablespoon of water. Lightly brush the egg wash on the top crust for a shine. Don't brush it too thick, it will make the crusts soggy and it may break.
Pie Crust Shield
If you tend to have a problem with the top edges of your pie crust burning, you need a pie crust shield. You can easily make one with tin foil. Just be careful and make sure that it is covered evenly all around the pie. To save time, you can use a Silicone Pie Crust Shield. It does the same thing as the tin foil, but you don't need to be careful about it being even. It is made to always be even.
History of Cherry Pie
No one is quite sure when people started making cherry pie. But, cherry pie was mentioned in this old folk song - there was sheet music found for this song as early as 1847. So, people have been making cherry pie since at least 1847.

Recipe for Cherry Pie filling

- Serves: fills 1 - 9 inch pie
Ingredients
- 4 1/2-6 cups of pitted cherries
- 1 cup sugar
- 1/2 cup water
- 1/4 cup corn starch
- 1/4 tsp of almond extract
Instructions
- Combine all ingredients except the extract. Put in saucepan over medium heat.
- Heat to a boil, then reduce heat. Stir frequently until mixture is thickened. (around 10 minutes).
- Stir in extract and let cool
The filling is now ready to add to a pie shell.
Cherry Pie Filling
The best filling for pie is homemade. But, if you don't have enough time to make filling, you can buy it, fully made. The most important thing to check when you are buying canned or jarred pie filling is the amount. Make sure that there is enough filling for the size of pie you are making. I have noticed that most of the pies I make need two cans of filling.
For example, if you are making a 9 inch cherry pie, you would need 2 cans of Comstock Cherry Pie (21 oz) filling.

This should be enough to fill a 9 inch pie. But, if you like your pie to be deep dish, you will need more filling.

Putting it all together

- Serves: 6-8 people
- Prep Time: 10 minutes
- Total Time: 55 minutes
Ingredients
- 2 pie crusts
- Cherry pie filling
- Egg Wash (optional)
- sugar (optional)
Instructions
- Preheat oven to 425°F
- Line the nine inch pie pan with one of the pie crusts.
- Pour cherry filling into crust.
- Top the pie with the other crust (either in lattice form, or just rolled out with vent holes or cookie cutter holes in it). Crimp top and bottom together so they stick together while baking.
- If you want the crust to look shiny, lightly brush the egg wash on the pie. Sprinkle sugar over the top for a slightly sweeter, slightly sparkly crust.
- Cover the edges of your pie with a pie guard
- Bake for 30 minutes
- Remove pie guard
- Bake for 10-15 minutes or until golden brown.
