Cherry Streusel Muffins
One of my favorite books of all times is Judith Viorst's "Alexander and the Terrible, Horrible, No Good, Very Bad Day". Poor Alexander just has one of those days where nothing seems to go right... he wakes with gum in his hair, gets the middle seat in the car pool, had a dental appointment, gets in trouble for wrecking his dad's office by accident, and has to wear his rail road pajamas. (I totally get that, I myself am partial to my cowgirl jammies... the stripey ones just don't feel right). He figures that if he could move to Australia his life would be better.
Today was one of those days. Nothing really bad happened... but somehow the day had a cloud. Didn't sleep well, had to change 3 times because the clothes didn't fit right or didn't look right and then I spilled my coffee on my shirt, missed breakfast, had bank issues, the plumber came to fix the shower, but can't put the handle back on until he special orders a screw that is apparently manufactured in Greenland, I spilled coffee on my computer( just a little, on the corner, but STILL!), I almost got run over by some crazy teen driver, there was no peanut butter for the cookies (I just bought a vat... where did it go??) and the grocery store ran out of roast beef.... and I REALLY wanted to make beef dip sandwiches for dinner. (how in the heck does a grocery store run out of roast beef?)
Long story done.
Time for some baking therapy.
Cherry Streusel Muffins were just the ticket. I've revealed my love for streusel before. It's a happy relationship.... streusel exists.... I pick it off and enjoy it, everyone's happy. And the cherries... Morello Cherries... add a wonderful, tart, juicy counterpart to to sweet streusel.
MMMmmmmm...
So... my day is ending on a high note. I had a Cherry Streusel Muffin ( might have picked the streusel off of a few other muffins too)... and I have my cowgirl jammies on.
Tomorrow will be a much better day (breakfast is already made) ... and but I'd still like to go to Australia.

Cherry and Streusel.....

- Prep Time: 15 min
- Total Time: 1 hour
Basic ingredients... flour, sugar, butter, eggs.... add some vanilla and lemon peel for flavor, and bake it with tart juicy cherries, and you have a work of art.
Well... you have a very yummy muffin.
I adapted this recipe from a German crumb cake recipe, so all of you traditionalists stop complaining about how this isn't a traditional muffin. It's good... try it.
I used Morrello Cherries from a jar.. they are tart and juicy. You can used canned cherries... just not cherry pie filling, and PLEASE don't bother with Marishino Cherries (not even sure if those things really are cherries). Fresh Cherries would work too...
OR
You can use Apricots, Peaches, Boysenberries or Blueberries.
Be creative.

Ingredients
- MUFFIN BATTER
- 1/2 cup Butter
- 3/4 cup Granulated Sugar
- 1 Egg plus 3 Egg Yolks
- 1 tsp Lemon Zest
- 1 tsp Vanilla Extract
- 1 1/4 cup Unbleached Flour
- 1 tsp Baking Powder
- 1 Jar Morello Cherries (12 oz drained 24 oz undrained 700g)
- TOPPING
- 1 1/4 cup Unbleached Flour
- 1/2 cup Granulated Sugar
- 8 Tbl Butter
Instructions
Preheat Oven to 350 Degrees Fahrenheit
Line Cupcake Pan with paper liners.
Put the Butter and Sugar into the Mixer and let 'er rip on medium speed. You want it to be light and fluffy.. should take 5 minutes. You have time to read a magazine article, brew a pot of coffee, and yell at the kid who was supposed to take out the garbage but didn't.
Add the Egg and Egg Yolk (use the egg whites to make Pavlova...) Beat and scrape down.
Add the Lemon Zest and Vanilla. Beat and scrape down.
Combine the Baking Powder with the Flour... add to the butter mixture gradually (seriously... gradually, unless you happen to look really good in white powder)
Beat to combined....scrape... beat... DONE.
Fill the muffin liners with the batter... 1/3 to 1/2 full.. should make 12 to 15 muffins.
Top the batter with cherries.. I use 6 on each.. no reason, six just feels right. Set aside
Make the Streusel....
Put the flour and sugar in a bowl. Cut the butter into the bowl. Using your fingers...rub the butter into the flour. It will look like crumbles.
Put the streusel over the cherries.
Bake for 20 to 23 minutes... should be beginning to brown on top.
Cool on rack.

- Yes, I tend to cook too. But not just baking, other foods, creating recipes some of which are good and yummy, some of which we never mention in polite conversation again. But Mama Cooks! I take out my frustrations by concentrating on new recipes. Love this lens. Blessed.
