Chewy Oatmeal Raisin Cookies

After making several batches of oatmeal cookies we baked a batch that taste incredibly good. This batch of cookies didn't last 2 hours while the rest are still sitting in the cookie jar. With their slightly chewy texture to the barely crispy edges they are by far the best oatmeal cookies I've ever had.
When making great cookies it is important to note that your guest and yourself are who you are baking for. To add a little love into those cookies ask them what their favorite add-ins are and the texture and sweetness that they desire. For instance I enjoy the sweet taste of brown sugar and my relatives like the sweet gooey chocolate morsels and crispy edges. The combination created out of love of food is what created these delicious after dinner treats.

The Winner Oatmeal Cookies

Oatmeal Raisin Refrigerator Cookies

Ingredients
1 1/2 cups sifted flour
1 Teaspoon baking soda
1 1/2 teaspoon salt
1 cup shortening Crisco Butter Flavored
1 cup sugar
1 cup brown sugar, firmly packed
2 eggs
1 1/2 teaspoon vanilla
3 cup oats
1/4 cup chocolate morsels
1/4 cup nuts
1/4 cup raisins

Mix
Sift dry ingredients well.
Add wet ingredients then add dry sifted ingredients.
Add nuts, chocolate, and raisins

Refrigerate
This cookie dough requires refrigeration.
Put the mixed cookie dough in the refrigerator until cold or until ready to bake.
You may also make this cookie dough the day before and refrigerate until ready.

Bake
400 degrees for 6-8 minutes

Self Frosting Oatmeal Cookies



Ingredients


1 cup brown sugar

1 cup white sugar

1 cup vegetable oil

2 eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1 teaspoon salt

2 1/2 cups rolled oats

1/2 cup confectioners' sugar





Directions



1. In a large bowl, cream together the brown sugar, white sugar, and vegetable oil until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Combine the flour, baking powder and salt; stir into the creamed mixture, then mix in the rolled oats. Cover and chill for at least 2 hours.


2. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.


3. Roll cookie dough into walnut sized balls, roll the balls in the confectioners sugar to coat, and place 2 inches apart onto the prepared cookie sheets.


4. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Oatmeal Pecan Cookies with Molasses

Preheat oven 375 degrees


Ingredients:
1 cup sugar
1 cup shortening Crisco Butter Flavor
2 eggs
2 cups of oatmeal
2 cups of flour
2 tablespoons molasses
2 cups of pecans
1 teaspoon baking soda dissolved in 1 tablespoon of hot water
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon all spice
1 cup of raisins

Mix
Sift dry ingredients well.
Add wet ingredients then add dry ingredients to the wet mixture.
Add raisins and pecans.

Bake
375 degrees for 8-10 minutes

Ingredients

1/3 cup butter melted with 1/3 cup shortening
2 tablespoons molasses
2 tablespoons of water
2 cups of oats
1/2 cup raisins
1/2 cup pecans

Mix
Sift flour, soda, and spices.
Beat egg and sugar.
Add wet ingredients then add dry ingredients.
Add pecans and raisins.

Bake
400 degrees for 6-8 minutes

My best memories from past holidays aren't the presents but the love and care that was put into some of the most delicious Holiday cookies and desserts and drinking chocolate by the fireplace with all my cousins and family. When we baked everyone enjoyed the Oatmeal refrigerator cookies. They were chewy and a slightly crispy on the edges.

    Oatmeal pecan sounds good! I'd love to try your recipe but I don't have molasses. What can I use as substitute? Honey? I love all kinds of oatmeal cookies, the chewy kind especially but also love them a bit crispy.

    I really shouldn't look at food lenses--especially really tasty ones--when I'm trying NOT to do any late-night snacking. But these do sound pretty darn yummy. Really nice job on your lens, and I'll have to look at some others you've made. I'm glad you stopped by one of my lenses and left a comment (it's quite rare on that lens!), since I hadn't seen you here before. Always nice to meet another squid!
