Here's one of many traditionally-styled Chicha Morada recipes. Although it looks like grape Kool Aid, the taste will be unfamiliar to most people from the U.S.; not unpleasant, but unfamiliar.

Ingredients
- Purple Corn: 1 pound of kernels (or 15 ounce bag)
- Water: 2 gallons
- Cinnamon Sticks: 2
- Cloves: 2 or 3
- Apple: cored and cut into chunks
- Pineapple Peels: or a handful of Pineapple Chunks
- Sugar: 1-1 1/2 cups or to taste
- Lime Juice: 1/2 cup more or less
Instructions
- Put corn kernels, cinnamon stick, cloves, apple chunks, pineapple peals and 1 gallon of water into a pot that you don't mind staining.
- Boil for 1 hour.
- Strain liquid into a glass (non-staining) container, retaining the corn, spices and fruit.
- Add the other gallon of water to the corn, spices and fruit and boil again for 45 minutes to 1 hour.
- Add sugar and lime juice. Stir until sugar is dissolved.
- Add the 2nd batch of strained liquid to the 1st.
Store under refrigeration and enjoy well chilled.
Garnishes vary by region and include: chopped fruit, bamboo, flags and, of course, umbrellas.

- Just a brief comment regarding a pull quote you use here...Peruvian guides recommend Mate de Coca, not Chicha Morada to help with the altitude of Machu Picchu. Mate de Coca slows your heart rate slightly enabling you to breathe in higher altitudes of that region.

- What is the difference between Api and Chicha Morada. Is it the same thing. When we were in Bolivia we only saw Api.

- Ohh, thanks for this lens! My father-in-law is Peruvian and we always ask him to bring back this in powdered form and Aji Amarillo paste whenever he visits Peru. We just really like the flavor, didn't know it was actually good for you! I never even considered making it from scratch but will now if I can find the purple corn here.
