Chicken Casserole Recipe
Ingredients
- Meat from one cooked chicken
- 10 corn tortillas
- 1 diced white onion
- 1 diced red bell pepper
- 1 diced green bell pepper
- 1 tablespoon vegetable oil
- 8 oz grated cheddar cheese
- 1 can of cream of mushroom soup
- 1 can of cream of chicken soup
- 1 cup of chicken broth
- 1 can Ro-Tel diced tomatoes with green chilies
- 2 tablespoons sour cream
- 2 teaspoon cumin
- 1 teaspoon ancho chile powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon chipotle
- 1 teaspoon salt
Instructions
1. Preheat oven to 350 degrees.
2. In a frying pan, heat the vegetable oil and sauté the green bell pepper, red bell pepper and white onions for 2 minutes. Transfer it to a bowl.
3. Add the chicken stock together with the cream of mushroom soup, cream of chicken soup and sour cream.
4. Then toss in the diced tomatoes with green chilies, cumin, oregano, Ro-Tel and chili powder.
5. Stir and whisk together to make the sauce. Then cut the tortillas into quarters.
6. In a casserole, put a little bit of sauce at the bottom. Spread evenly and place half of the cooked chicken meat.
7. Pour some sauce on top of the chicken and 1/3 of the cheese. Layer it with tortillas.
8. Then top it with another layer of chicken meat and top it with almost half of the sauce. Sprinkle another 1/3 of the cheese.
9. Top it with the last layer of tortilla then the remaining sauce and the last of the cheese.
10. Bake in oven for 40 minutes or until bubbly.
