Chicken Chow Mein Recipe
Ingredients
- 8oz vermicelli noodles
- 2 tbsp peanut oil
- 3 boneless skinless chicken breasts (1.5 lbs)
- ½ tsp garlic salt
- 16oz bag frozen stir fry vegetables
- 2 tsp cornstarch
- 1 ½ tbsp stir fry oil
- 2 to 3 cups peanut oil (for frying)
- FOR THE SAUCE:
- 1 tsp sugar
- 2 tbsp sherry
- 3 ½ tbsp oyster sauce
- ½ cup chicken broth
Instructions
1. Bring a large pot of water to a boil and add the noodles. Cook for 7 minutes or until al dente. Drain water.
2. Stir peanut oil until evenly coated.
3. Remove all fats from the chicken and cut the breast into 1 inch pieces.
4. Sprinkle the pieces with garlic salt and mix thoroughly. Set aside.
5. Microwave the frozen vegetables for 4 minutes or until cooked through. Drain vegetables in a colander and set aside.
6. In a large cup, mix all the sauce ingredients and set aside.
7. In a small cup, mix cornstarch with water for it to be dissolved and set aside.
8. In a wok, add 2 to 3 cups peanut oil and heat. Add 1/3 of the noodles to the oil. Cook for 6 minutes.
9. Remove noodles with a wire strainer and place it on a plate lined with paper towels to drain.
10. Finish cooking the remaining noodles.
11. Remove peanut oil in the wok and add the stir fry oil. Heat on high and add the chicken. Cook for 7 minutes with stirring every 2 minutes.
12. Add the vegetables and sauce. Stir until everything is coated with the sauce.
13. Add cornstarch and stir until thick. Remove from heat.
14. Place noodles on a plate and top with the chicken and vegetables. Pour in sauce.
15. Serve.
