Easy Chicken Enchilada Casserole
What You Need
Ingredients for Chicken Enchiladas4 cups cubed chicken
2 pints sour cream
1 can (28 oz.) green enchilada sauce
12 tortillas, torn into strips
2 cups cheddar cheese

Before You Begin....
1. Wash you hands.2. Preheat the oven at 350 degrees.

- 4 cups cubed chicken
- 2 pints sour cream
- 1 can (28 oz.) green enchilada sauce
- 12 tortillas
- torn into strips
- 2 cups cheddar cheese
Instructions
Preheat oven at 325 degrees.
Step 1 - Cut the chicken into small cubes; place into a medium bowl.
Step 2 - Add 2 pints of sour cream to the bowl of chicken; mix well.
Step 3 - Coat the bottom of a 9x13 inch pan with some green enchilada sauce. Reserve the rest of the green enchilada sauce.
Step 4 - Tear 12 tortillas into strips; arrange them on top of the green enchilada sauce in the pan.
Step 5 - Spread half of the chicken and sour cream mixture over the tortillas strips.
Step 6 - Sprinkle 1 cup of shredded cheddar cheese over the chicken mixture.
Step 7 - Arrange a another layer of tortillas strips on top of the cheese.
Step 8 - Spread the rest of the chicken and sour cream mixture over the tortillas strips.
Step 9 - Sprinkle 1 cup of shredded cheddar cheese over the chicken, arrange another layer of tortillas over the cheese and then pour the remaining enchilada sauce over it.
Step 10 - Place the enchilada casserole in the oven and bake at 350 degrees for 35 minutes or until bubbly.

Step 8 - Spread the rest of the chicken and sour cream mixture over the tortillas strips.

Step 9 - Sprinkle 1 cup of shredded cheddar cheese over the chicken, repeat tortilla layer, pour remaining sauce.

Step 10 - Place the casserole in the oven and bake at 350 degrees for 35 minutes or until bubbly.

With chicken and served with a few salsas, especially if it's a Mexican salsa like salsa taquera. Mmm, SO good! But beef can be freaking delicious too if it's marinated right... Hard choice, but generally I'd choose chicken.
