Chicken Gumbo Soup

Your chicken gumbo soup is basically a somewhat thickened sort of soup without the traditional ingredients of a real gumbo. In order for the name gumbo to be used, the ingredients should contain a roux (mixture of either vegetable oil, lard or butter and flour), Andouille (smoked sausage) and other items usually found in a gumbo. Interestingly, the name after which gumbo was originated, okra, is still found in the recipes, but that's really the only connection between a good ol' Cajun or Creole gumbo from the deep south!!

Chicken Gumbo Soup

Ingredients

* 2 tablespoons bacon drippings
* 3 chicken breasts, deboned, cooked, diced
* 2 stalks celery, diced
* 1 onion, diced
* 4 cups chicken broth

* 1 (16 ounce) can tomatoes, undrained
* 2 teaspoons salt
* 1/3 cup green pepper, diced
* 1/3 cup long grain rice, uncooked
* 1 cup frozen okra
* 2 tablespoons parsley, chopped
* 1 bay leaf
* 1 dash Worcestershire sauce

Chicken Gumbo Soup

Cooking Directions

1. In a large soup pot, add all ingredients.
2. Bring to a boil.
3. Reduce heat and simmer until all vegetables and rice are tender.
4. Remove bay leaf and serve.

This will serve 3 easily. Pretty simple, but if you're in a hurry and aren't trying to impress anyone, this one will work. This recipe came from Recipe Zaar.
