A Family Favorite!
I don't like long drawn out processes so any recipe you find that I have published online will simply be the recipe, I hope this doesn't bother anyone, but who has time to dig through all the garbage to find what it is you really wanted in the first place!
Chicken Tortilla Soup
1 Tablespoon Olive Oil
1 large onion finely chopped
1 large tomato finely chopped
2 Cups cooked chicken, cut thin
4 cups chicken broth
1 bag of frozen corn
2 Tablespoons finely chopped parsely
Dash of tabasco (optional)
1 lime
6 oz tortilla chips
salt and pepper
Here's what you do:
Chop onion and tomato, set aside. Cut lime into 4 pieces, set aside. In a large pot, heat oil over low heat, add onion and pinch of salt and pepper, cook stirring for 5 minutes, add tomato, parsely and cooked corn, cook 2 min. stirring, add tabasco and chicken cook 1 min. add juice from lime, limeshells, and broth, bring to boil, reduce heat, let simmer 5 min over medium heat. Remove lime shells, (squeeze all juice out) serve hot over tortilla chips,or how you desire.
You can also top this soup off with sour cream and shredded cheddar.
