Tomato and Eggs
Want an easy, relatively quick recipe for a very popular Chinese dish? Well, look no further. This is one of the dishes I eat weekly, if not more often, and which I consider a comfort food, if there ever was one! You'll likely have all these ingredients on hand and can whip it up tonight. Chi hao! He hao! (Chinese for "eat well, drink well!")

4 eggs
3 medium tomatoes
5 T. oil
2-3 cloves garlic
1/2 teaspoon salt
1/4 teaspoon chicken bullion

Preparation
1. Crack eggs into a bowl and whisk together until they are light yellow in color.
2. Wash tomatoes, chop into large pieces.

Cooking
1. Heat 2 T. oil in wok, add garlic and fry about 30 seconds or until fragrant.
2. Add tomatoes and stir vigrourously over high heat. Turn flame to low and then simmer for 5 minutes.
3. Place tomatoes in another dish and then wash and dry wok.
4. Add remaining 3 T. oil to wok, then add beaten eggs. Fry until cooked and break into large pieces.
5. Add tomato mixture to eggs and simmer over low heat for 10-15 minutes. Add salt and chicken bullion.

Serving Suggestions
This dish is best served with rice but is also good with a bowl of plain noodles. It will serve two people as a main dish, accompanied by another one or two vegetables. If you are serving more people, you can easily double or triple the ingredients. Chinese meals usually consist of one dish per person, with all guests sharing each dish.
