CHIPOTLE

If there's one thing I've noticed about the restaurant Chipotle it's that many people pronounce it incorrectly. So, let me start off by adding this:

"che-po-tlay".

In Spanish, Chipotle is a smoked, usually dried jalapeño pepper. But in the good ole USofA it just means really addictive and tasty. It used to be that Mexican food was found in specific sit-down restaurants or places called Taco Bell, so how did this Mexican-Subway hybrid come to be?

A Brief History of the Founder of Chipotle

Steve EllsSteve Ells, the CEO of Chipotle, can be an inspiration to many if, for the only reason, that when he graduated from college he still had no idea what he wanted to do with his life. He did like the idea of being a chef and enrolled in the Culinary Institute of America. He moved to San Francisco where he ended up seeing taquerias with its simple and economical burrito making style and all the hungry customers in long line who embraced it.

The year was 1993. Bill Clinton, was inaugurated into the presidency. Jurassic Park would be the highest grossing film of the year. And Ells would hightail it back to Colorado, take out a modest loan from the Bank of Mom and Dad and open his first Chipotle.

The Original Chipotle

That's what it looked like. The original Chipotle circa 1993. Now if you look at it closely you might be able to see that this location was originally an ice cream shop called Dolly Madison. Steve Ells found this location and opted to turn it into the first of what would become many Chipotle Mexican Grills .

Within a few years it branched out to 8 more locations in Colorado. And finally, in 1999, Chipotle officially opened up shop in two more states (happily called Minnesota and Ohio).

One additional and earth-shattering event took place in 1999. This was when Steve Ells really started paying attention to his food back when it was still a living creature. Within a year he started serving naturally raised pork (but more on all this later).

In 2006, Chipotle went public and was listed on the New York Stock Exchange.

Today, Chipotle has 1100 locations worldwide (39 states, 3 countries) and I was fortunate enough to try it in London, England. It tasted a bit different but nonetheless I had to check it out. They often taste a bit different depending on the region. I believe the best steak burrito I ate was just outside of Dallas, Texas.

Paris has one coming soon and more are opening every year - all of which are company owned, they don't franchise.

Food with IntegrityTaco Bell, while good especially when you can find a sober driver to take you around midnight in the midst of a drunken stupor, has always had questionable meat. While tasty enough, its meat is usually graded in the lower percentile and you wouldn't expect quality treatment of whatever animal you were actually eating.

Chipotle boasts "Food with Integrity" which in their words means: serving the very best sustainably raised food possible with an eye to great taste, great nutrition and great value.

They support local farmers! They're in the process of going organic and monitoring how their meat is raised. No antibiotics or hormones (at least, they try to seek out those). 100% of their pork is naturally raised as is the chicken. Beef is 60% and rising as of almost 5 years ago with their goal to be 100%.

What's your "usual" at Chipotle? How good are those chips? Complain that you don't have one close enough to you (I can't guarantee though that anyone from Chipotle will actually pay attention).
