Simple ... But WOW!

Bittersweet Chocolate Walnut Bundt Cake

With A (Secret) Ingredient

The above photo used under Creative Commons from: 3liz4, on Flickr

Chocolate walnut cake recipes abound, but this particular recipe has a secret ingredient . . . that enriches the flavor even more.

This moist chocolate cake, full of walnuts can be baked in the "Classic Bundt Pan" below:

Nordic Ware Original Platinum Collection Bundt Pan

This beloved, classic bundt cake pan is all too familiar . . . with vertical alternating narrow/pinched and wide/rounded fluting. Its heavy, cast-aluminum sturdiness promotes even baking and holds 12 cups of batter (enough to make a cake for 10 to 12 people).

Important!

Use the proper cooking spray.

Spray the Bundt® pan with a non-stick vegetable oil. A non-stick spray such as Bakers Joy* which contains flour. After spraying, take a pastry brush and brush the oil into the grooves of the pan and then turn the pan upside down on a paper towel, allowing excess oil to drain away. Avoid using spray with Lecithin listed as an ingredient as a gummy residue can build up over time.

Deepest, Darkest Most Delicious Chocolate Cake

Recipe by Maui Bonnie who claims that this has been her "go-to" chocolate cake recipe for potlucks and parties for over 20 years

Ingredients
best quality unsweetened cocoa powder for dusting pan
1 1/4 cup strong, brewed black coffee
    1/4 cup bourbon (or whiskey)
6 ounces best quality unsweetened chocolate, broken into pieces
1 cup unsalted butter, cut into pieces
    1 3/4 cup sugar
    scant 2 cups all-purpose flour
    1 teaspoon baking soda
    1/8 teaspoon salt
2 eggs, at room temperature, lightly beaten
    1 tablespoon pure vanilla extract
    confectioners' sugar for dusting cake
Directions
Preheat the oven to 275 degrees.

Butter a 9" tbundt pan and then dust bottom and sides liberally with cocoa powder. Knock out excess and set aside.

In a medium, heavy-bottom saucepan over low heat, heat the coffee and the bourbon. When it's warm, add the chocolate and the butter. Stir constantly until smooth. Remove from heat and allow to cool down slightly.

By hand, stir in the sugar until well combined. Let stand for five minutes. Transfer to the bowl of an electric mixer.

Sift together the flour, baking soda and salt. With the mixer on slow speed, add the flour mixture to the chocolate mixture IN FOUR ADDITIONS. Mix only until each addition is incorporated. Add the eggs and vanilla and beat on low/medium speed until batter is smooth.

Pour into the prepared bundt pan. Bake until cake tester in the center comes out barely clean, about 1 1/2 hours.

    Cool completely in the pan.

After removing from pan to a cake plate, garnish* as you'd like

Serving suggestion: pipe chocolate icing in crevices (see photo above) and serve with a flavored whipped cream or homemade vanilla bean ice cream.
